Chicken Schnitzel with Mustard Sauce

Whisk yogurt and mustard in a bowl until smooth; set aside
- 1/2 c plain low fat greek yogurt
- 1/4 c whole grain mustard
- 5 slices white bread torn
- 3/4 tsp dried marjoram
- Kosher salt and freshly ground pepper
- 1/2 c all purpose flour
- 1/2 tsp paprika
- Pinch of freshly ground nutmeg
- 2 large eggs
- 4 chicken cutlets, 1/8" thick
- Vegetable oil for frying
- Applesauce for serving, optional
Roasted Butter Herb Turkey

In a small bowl, combine softened butter, poultry seasoning, garlic herb sauce mix, and crushed garlic
- 3/4 cup butter, softened
- 1 1/2 teaspoons poultry seasoning
- 2 tablespoons garlic herb sauce mix (recommended: Knorr)
- 1 1/2 teaspoons crushed garlic
- 1 (32-ounce) bag celery and carrot party sticks
- 2 large onions, large dice
- 1 (32-ounce) container low-sodium chicken broth
- 12-pound turkey, thawed if necessary
- 1 tablespoon salt
- 1 tablespoon pepper
- 3 (3/4-ounce) packets fresh herbs poultry herb blend (sage, thyme and rosemary)
- 1 lemon, thickly sliced
Sage Limeade

Heat 1 1/2 c each sugar and water in a saucepan until the sugar dissolves
- 1 1/2 c sugar
- 1 1/2 c water
- 1 1/2 c lime juice
- 1/2 c lemon juice
- 2 cups water

Croque Monsieur Pockets

Preheat the oven to 425 degrees F
- 1 c grated gruyere cheese
- 1 c deli sliced ham, chopped
- 2 tsp dijon mustard
- 1/8 tsp freshly grated nutmeg
- Pinch of cayenne pepper
- Vegetable oil for brushing
- All purpose flour for dusting
- 1 11 oz. tube refrigerated French bread dough
- 1 large egg
Steak and Hummus Sandwiches

Preheat a grill or grill pan to medium high
- 1/2 red onion, thinly sliced
- 1/2 c sliced pickled banana peppers, plus 1/2 c juice from the jar
- 1/2 c hummus
- 1 lb grilled flank steak
- 2 tbsp EVOO
- Kosher salt and freshly ground pepper
- 4 pocketless pitas
- 8 romaine lettuce leaves, thinly sliced
- Hot sauce, for topping
Green Beans with Shallots, Thyme and Shiitake Mushrooms

Bring a large pot of salted water to a boil
- 2 lbs green beans, trimmed
- 2 tbsp olive oil
- 2 tbsp butter
- 1/4 cup thinly sliced shallots
- 12 oz. fresh shiitake mushrooms, stemmed and halved
- 2 tsp finely shredded lemon peel
- 3 tbsp lemon juice
- 2 tbsp fresh thyme leaves
- Sea salt
- Freshly ground pepper
- 1/2 cup slivered almonds
Grilled Vidalia Onion Salad

Preheat grill to medium heat
- 3 tbsp EVOO
- 8 vidalia onion bulbs
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp whole grain dijon mustard
- 1 tbsp red wine vinegar
- 2 tsp chopped flat leaf parsley
- 2 tsp chopped fresh tarragon
- 12 heirloom cherry tomatoes, halved
- 2 hard cooked eggs, sliced
- 2 tbsp minced fresh chives
Moroccan Chicken Burgers with Feta and Carrot Slaw

- 1 lb ground chicken
- 1/2 medium yellow onion, grated
- 3 tbsp chopped, fresh mint
- 2 tbsp harissa
- 1 1/2 tsp ground cumin
- 1 1/2 tsp finely grated fresh ginger
- Kosher salt
- 3 medium carrots, grated
- 1 tbsp fresh lemon juice
- 2 tsp granulated sugar
- 1 tsp cumin seed
- 4 mini whole wheat pitas, split open
- 1 1/2 oz. crumbled feta
- Vegetable oil for grilling

- 4 boneless, skinless chicken breasts, cut into bite-sized pieces (about 1 3/4 pounds)

- 1 cup sliced carrots (about 3 small)
- 2 1/2 cups sliced zucchini (about 2 medium)
- 2 (14.5-ounce) cans diced tomatoes with basil, garlic, and oregano
- 2 (14.5-ounce) cans chicken broth
