Kahlua Fudge Sheet Cake

Preheat oven to 350 degrees F
- Frosting:
- 2 c all purpose flour
- 1 3/4 c sugar
- 2 tsp ground cinnamon

- 1 c Kahlua or strong brewed coffee
- 1/2 c butter, cubed
- 1/2 c marshmallow creme
- 1/2 c baking cocoa
- 2 eggs
- 1/2 c buttermilk
- 1/2 c chopped pecans
- 1/2 c butter, cubed
- 1/3 c baking cocoa
- 1/2 c marshmallow creme
- 3 3/4 c confectioner's sugar

Bacon Wrapped Chicken with Blue Cheese and Pecans

Heat the oven to 375 degrees F
- 4 pieces boneless, skinless chicken breast
- Salt and freshly ground black pepper
- 1 cup blue cheese crumbles
- 1/4 cup toasted pecans, chopped
- 2 scallions, sliced on bias
- 4 slices good-quality center cut bacon
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup chicken stock
- 1/2 cup half-and-half or cream
- 2 tablespoons grainy mustard

Make the dough: Warm the milk in a medium saucepan over low heat until it reaches about 100
- For the Dough:
- 1 cup whole milk
- 1 1/4-ounce packet active dry yeast
- 1/4 cup plus 1/4 teaspoon granulated sugar
- 4 tablespoons unsalted butter, melted, plus more for the bowl
- 1 large egg yolk
- 1 1/2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour, plus more if needed

Beef and Horseradish Sauce Sandwich

- For the beef:
- 2 to 3 pounds fillet of beef, trimmed and tied
- 1 tablespoon unsalted butter, at room temperature
- 1 teaspoon Dijon mustard
- 2 teaspoons kosher salt
- 2 teaspoons coarsely ground black pepper
- For the sandwich:
- 1 loaf health or 7-grain bread
- Mustard Horseradish Sauce, recipe follows
- 1 bunch arugula
- Kosher salt
- Freshly ground black pepper
- Unsalted butter at room temperature
- Mustard Horseradish Sauce:
- 3/4 cup good mayonnaise
- 1 1/2 tablespoons Dijon mustard
- 1 tablespoon whole-grain mustard
- 1/2 tablespoon prepared horseradish

Beef Shank Sauce over Polenta

Preheat the oven to 325 degrees F
- 5 lbs trimmed beef shanks, cut 2" thick
- Kosher salt and freshly ground pepper
- 3 tbsp EVOO
- 2 onions, cut into 1/2" dice
- 4 celery ribs, cut into 1/2" dice
- 2 carrots, cut into 1/2" dice
- 2 c dry red wine
- One 28 oz. can crushed tomatoes
- 2 c low sodium vegetable broth or water
- Cooked polenta or pasta for serving
Hash-Brown Eggs

- 10 ounces sliced mushrooms
- 1 1/2 tablespoons flour
- 1/2 cup marsala wine or white wine
- 1/2 cup heavy cream
- 2 tablespoons chopped flat-leaf parsley
- Salt and pepper
- 1 cup long-grain rice
- 2 cups coarsely chopped rotisserie chicken
- 2 tablespoons grated parmesan cheese
Artichoke & Almond-Stuffed Chicken Breasts

In a small bowl, combine the artichokes, spinach, almonds, parmesan, orange zest and salt and pepper
- 1 6 oz can of artichoke hearts, rinsed and chopped
- 1/2 c baby spinach
- 2 tbsp roasted, almonds chopped

- 1 tsp grated orange zest

Mac n' Cheese Stuffed Poblanos

- 2 cups Monterey Jack Cheese (grated)
- 8 Poblano Peppers
- 2 tablepsoons Olive Oil
- 1 cup Cornbread (crumbled)
