- 3 roasted red peppers, peeled, seeded and chopped

- 3-4 tbsp sour cream

- 4 ounces (3/4 cup) gluten-free cornmeal
- 3 ounces (3/4 cup) sorghum flour
- 3 ounces (3/4 cup) brown rice flour

- 1 green bell pepper diced
- 1 red bell pepper diced
- 1 tbsp minced garlic
- 2 1/2 tbsp chili powder
- 1 tbsp cumin
- 1 can 28 oz. peeled, crushed tomatoes with juice
- 2 tsp thyme
- 1 can 15.5 oz black beans
- 1 c cooked corn
- 1 large bunch fresh spinach, chopped
- salt and pepper to taste
