cheesy polenta

- 9 cups water
- 1 tablespoon salt, plus extra for seasoning
- 2 1/2 cups yellow cornmeal or polenta
- 1 1/2 cups shredded vegan cheese
- 1 1/2 cups almond milk, at room temperature
- 10 tablespoons (1 1/4 sticks) vegan butter, at room temperature, cut into 1/2-inch pieces
- 1/3 cup chopped fresh flat-leaf parsley
- Freshly ground black pepper
margarita mix- homemade

1.Heat water and sugar in a small sauce pan until completely dissolved and the water is clear
- For the homemade margarita mix:
- ◦1/2 cup sugar*
- ◦1 cup water
- ◦1 cup fresh squeezed lime juice (~8-12 limes)
- For the margaritas:
- ◦1 recipe homemade margarita mix
- ◦3/4 cup (6 oz) silver tequila
- ◦1/2 cup (4 oz) orange liqueur
- ◦lime wedges/slices for garnish (optional)
wild rice and mushroom risotto

Melt the butter with the oil in a saucepan over medium heat
- 2 tbsp olive oil
- 4 tbsp butter
- 3 leeks, white and light green parts only, chopped
- 2 cloves garlic, crushed
- 5 oz. shiitake mushrooms, chopped into 1/4 – 1/2 inch pieces
- 2 1/2 c wild rice mix (I got mine, a blend of about five varieties – from the bulk section of my health food store)
- 6-8 c veggie broth
- 1/2 c freshly grated Parmesan cheese

- 1 large bunch rainbow Swiss chard, stemmed, leaves coarsely chopped

butternut squash and apple soup

preheat oven 400 degrees. halve squash lengthwise and scoop out seeds
- 1 large butternut squash

- 1 – 20 ounce can pineapple slices in pineapple juice
