Pork Chops with Apples and Pancetta

In a large nonstick skillet, heat 2 teaspoons of the oil over medium-high heat

Toss the potatoes in a medium saucepan, cover generously with water and season generously with salt

- 1 onion, cut into 1/4-inch dice
- 1/2 cup chicken stock

Saffron Scallop Gratub

1. pre heat broiler. Mix breadcrumbs, 1 T
- 1/2 cup breadcrumbs
- 3 t. EVOO
- 1 T. chopped fresh parsley
- kosher salt
- pinch of saffron threads
- 1 1/2 to 1 3/7 large scallops, rinsed and patted dry
- 1 small onion - finely diced
- 2 carrots, finely diced
- 1 large clove garlic
- 1/4 t. smoked paprika
- 1/4 c. dry white wine
- 2 T. butter
Crab Wraps

Put the crabmeat into a bowl and add the mayonnaise, wasabi paste and oil and stir to mix

- 1 teaspoon mayonnaise

- 1 1/4 cups all-purpose flour, plus more for rolling
- 1 stick butter, cut into pieces and frozen
- Pinch salt
- Filling:
- 1 pound chicken thighs and legs
- 8 sprigs fresh thyme
- 6 cloves garlic, 4 smashed the other 2 thinly sliced
- Salt
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 serrano pepper, seeded and chopped
- 1 teaspoon sazon seasoning blend
- 1/2 teaspoon ground cumin
- Freshly ground black pepper
- 1 1/2 cups frozen peas, corn, onion, red pepper and black bean blend
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1 cup Mexican crema
- 1 egg
Crab in Phyllo
