Better than Creamed Corn

- 12-oz. pkg. frozen corn
- 1/2 c. brown sugar, packed
- 1 c. sour cream
- 1/4 c. grated Parmesan cheese
- In an ungreased 8"x8" baking pan, layer all ingredients in order given. Cover and bake at 350 degrees for 20 minutes. Stir to mix before serving. Makes 4 to 6 servings.

- 3 eggs
- 1 c. milk
- 1 c. Italian-seasoned dry bread crumbs
- 1/4 c. all-purpose flour
- 15 dill pickle spears, well drained
- oil for deep frying
- Garnish: ranch or Thousand Island salad dressing
Creamy Split Pea Soup

Heat reserved bacon drippings in a large soup pot; sauté onion and celery over medium heat until tender
- 1 lb. bacon, diced, crisply cooked and 2 to 3 T. drippings reserved
- 1 onion, diced
- 2 stalks celery, diced
- 8 c. water
- 16-oz. pkg. dried split peas
- 2 potatoes, peeled and diced
- 2 t. salt
- 1/4 t. pepper
- 3 cubes beef bouillon
- 1 bay leaf
- 1 c. half-and-half

Grilled Crisp Pizza

- 1/2 pkg (334 g) Old El Paso* 8 Large Flour Tortillas
- 2 tsp (10 mL) olive oil
- 1/2 cup (125 mL) Old El Paso* Thick N' Chunky Salsa
- 3/4 cup (175 mL) shredded Cheddar cheese
- 3/4 cup (175 mL) shredded Monterey Jack or mozzarella cheese
- 1/3 cup (75 mL) sliced pimento-stuffed green olives (optional)
- 24 slices pepperoni (from 1-inch/2.5 cm round pepperoni)
