Loaded Cauliflower Casserole

A potato replacement!
- 2 lbs cauliflower florets
- 8 oz shredded sharp cheddar cheese, divided
- 8 oz shredded Monterey Jack cheese, divided
- 8 oz block cream cheese, softened
- 2 bunches green onions, sliced (1 1/2 cups)
- 6 slices bacon, cooked and crumbled
- 1 clove garlic, grated
- Salt & pepper to taste
- 1/4 cup heavy cream (optional)
Tomato Pie with Cheddar Crust

Preheat the oven to 375 degrees F
- 4 large plum tomatoes (about 1 1/4 pounds), sliced into 1/4-inch thick rounds
- Kosher salt
- 3 1/2 cups mini Cheddar crackers or any type of crackers
- 4 tablespoons unsalted butter, melted
- 1 large egg
- 6 slices cooked bacon
- 2 1/2 cups shredded sharp Cheddar (your preferred cheese)
- 1 1/2 cups mayonnaise
- 2 cloves garlic, minced
- Salt and pepper to taste

- 1/2 tablespoon cinnamon
- 1/4 cup sugar
- 4 bread
- 1/4 cup milk
- 1/4 cup syrup
- 1 teaspoon confectioners' sugar
Slow-Cooker Rotisserie Chicken Chili

In 5- to 6-quart slow cooker, mix 1 cup onion, the beans, tomatoes, cooking sauce and chili seasoning mix
- 1 large onion, finely chopped (about 1 cup)
- 2 cans (15 oz each) Progresso™ black beans, undrained
- 1 can (28 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
- 2 pouches (9 oz each) Progresso™ Recipe Starters® fire roasted tomato cooking sauce
- 1 package (1 oz) chili seasoning mix
- 2 to 3 cups shredded deli rotisserie chicken (from 2-lb chicken)
- Additional chopped onion
- Shredded pepper Jack cheese

- 2 tablespoons finely grated Parmesan cheese
- 1 cup whole milk
- 2 1/2 tablespoons unsalted butter
- 3 tablespoons unbleached all purpose flour
- 1/2 teaspoon paprika

- 1-1/2 c. milk
- 1 t. vanilla extract
Mocha Blanca Martini

- Shake with ice:
- 5 parts Vanilla Vodka
- 1 parts Kahlua or coffee liqueur
- 2 parts White Chocolate Irish Cream
One Pot Chicken Spaghetti

-Heat a small amount of olive oil in a 5 quart pot or skillet over medium-high heat and add onion
- 1 pound of chicken breasts (about 2 large), cut into one inch chunks
- 2 tablespoons chopped garlic
- 2 tablespoons dried minced onion (or 1/2 cup fresh, diced)
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1/2 cup water
- 8 oz. dry pasta (about 2 1/2 cups)
- 1 teaspoon Italian seasoning
- 2 bay leaves
- 1 jar spaghetti sauce (26-28 oz)
- salt and pepper, to taste
- 1 cup fresh shredded Parmesan cheese
