These cookies are light and fun to make
- 2 1/2 cups powdered sugar
- 2 cups almond flour
- 1 vanilla bean, scraped
- 5 egg whites
- 1/2 teaspoon cream of tartar
- 1 lemon, zested
- Nonstick spray
Lemon Carnival Cookies

Combine the flours, sugar, baking powder, salt and lemon zest in a food processor
- 1 cup all-purpose flour, plus extra for dusting.
- 1/2 cup almond flour
- 1/2 cup superfine or baker's sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon fine sea salt
- Zest of 1 large lemon
- 1 large egg, at room temperature
- 1/2 teaspoon pure vanilla extract
- 1/2 stick unsalted butter, at room temperature, cut into 1/2-inch pieces
- Colored nonpareil sprinkles
- Special equipment: one 3-inch round cookie cutter
Crispy Fried Pickles with Buttermilk Dipping Sauce

In a large Dutch oven or heavy pot, preheat the canola oil to 375 degrees F
- 4 cups canola oil, for frying
- One 32-ounce jar whole dill pickles
- 2 1/4 cups panko breadcrumbs
- 1 teaspoon granulated garlic
- 1/2 teaspoon paprika
- Kosher salt and freshly cracked black pepper
- 1 cup all-purpose flour
- 1 1/2 cup buttermilk
- 1 teaspoon hot sauce, such as Crystal brand
- Buttermilk Dipping Sauce, recipe follows
- 1 cup buttermilk
- 2 tablespoons mayo
- 1 teaspoon chopped fresh chives
- 1 teaspoon ground cumin
- 1 teaspoon chopped fresh dill
- 1/2 teaspoon cayenne
- Kosher salt and freshly cracked black pepper
Miami Burger

Divide the meat into 4 equal portions (about 6 ounces each)
- 1 pound ground chuck (80 percent lean) or ground turkey (90 percent lean)
- Kosher salt and freshly ground black pepper
- 1 1/2 tablespoons canola oil
- 1/2 cup mayonnaise
- 4 cloves roasted garlic, mashed
- 4 hamburger buns, split
- 1/4 cup Dijon mustard
- 8 thin slices Swiss cheese
- 4 thin slices smoked ham
- 2 dill pickles, sliced into 1/4-inch-thick slices
Zucchini Ribbons with Herbed Butter

- 2 zucchini
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 shallot, minced
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
- Zest of 1/2 lemon
- Kosher salt and freshly ground black pepper

ITALIAN RICOTTA COOKIES

Cream butter; add sugar and continue creaming
- FROSTING:
- 1/2 lb. butter
- 2 c. sugar
- 1/2 tsp. salt
- 1 lb. Ricotta
- 2 eggs
- 1 tsp. vanilla
- Grated rind of 1 orange
- 4 1/2 c. flour
- 1 tsp. baking powderF
- 2 c. confectionery sugar
- 1/4 c. butter
- 3 tbsp. milk
- 1/2 tsp. vanilla
- Mix well and put on top of cookies and sprinkles.
- 1 tsp. baking soda
Grilled Rib Eye with Tomato and Poblano Chile Sauce
