Popcrn Oysters

Drain the Oysters and reserve the Liquor
- 2-8oz. cans of Whole Oysters & their reserved liquor (YES..of course you can harvest your own, and/or buy them fresh)
- 1/2 cup of Flour
- 1/2 cup of Corn Meal
- 1 beaten Egg
- 1 pinch of Salt & Sugar
- Old Bay for sprinkling..optional, but come on now!
- Butter for melting/dipping
- Oil for frying..I used Canola.
Beatty's Chocolate Cake

Preheat the oven to 350 degrees F
- Butter, for greasing the pans
- 1 3/4 cups all-purpose flour, plus more for pans
- 2 cups sugar
- 3/4 cups good cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1 cup buttermilk, shaken
- 1/2 cup vegetable oil
- 2 extra-large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup freshly brewed hot coffee
- Chocolate Buttercream, recipe follows
- 6 ounces good semisweet chocolate (recommended: Callebaut)
- 1/2 pound (2 sticks) unsalted butter, at room temperature
- 1 extra-large egg yolk, at room temperature
- 1 teaspoon pure vanilla extract
- 1 1/4 cups sifted confectioners' sugar
- 1 tablespoon instant coffee powder
Cream of Asparagus Soup

Melt butter in a large saucepan over medium-high heat
- 1/2 stick unsalted butter
- 1/2 onion, chopped, (about 1/2 cup)
- 1 clove garlic, crushed
- Salt and freshly ground black pepper
- 2 pounds asparagus, ends trimmed and cut into 1-inch pieces
- 6 cups chicken stock
- 1 pint sour cream, room temperature
- 2 teaspoons Hungarian hot paprika, for garnish
Grilled Shrimp Salad
By barbaran
In a food processor, pulse the garlic, shallots, 1/4 cup oil and sherry vinegar until well incorporated
- 1 clove garlic
- 1 shallot, minced
- 1/4 cup extra-virgin olive oil, plus 1 tablespoon
- 2 tablespoons sherry vinegar
- 1 1/2 packed cups basil leaves
- Pinch red pepper flakes
- 1/2 lemon, juiced
- Pinch kosher salt and cracked black pepper
- 10 (21 to 25) shrimp
- Wooden skewers, soaked in water for at least 20 minutes
- 2 bulbs fennel, thinly sliced
- 3 packed cups baby arugula
- 2 cups halved cherry tomatoes
- 2 tablespoons grated Parmesan
Boozy Braised Collard Greens

Remove stems from greens and discard
- 3 large bundles collard greens, well-washed
- 4 slices bacon, chopped
- 1/2 onion, sliced
- 3 cloves garlic, smashed
- 1/2 cup light brown sugar
- 3 tablespoons apple cider vinegar
- 4 cups chicken broth
- 1/2 cup bourbon
- Kosher salt and freshly ground black pepper
Bananas Foster

Melt the butter in a heavy skillet over a medium-high heat
- 1 stick salted butter
- 1 cup packed dark brown sugar
- 1/2 cup heavy cream
- 2 bananas
- 1/2 cup chopped walnuts or pecans
- 1/2 cup dark rum
- Dash cinnamon
- Vanilla Ice Cream, for serving
Punchbowl Cake

Prepare the pudding mix according to package directions
- One 3.4-ounce package instant cream of coconut pudding mix
- 1 to 2 pints strawberries
- 1 cup heavy whipping cream
- 2 tablespoons sugar
- Half recipe 5-Flavor Pound Cake, recipe follows, or 1 store-bought pound cake, cut into 1-inch cubes
- One 20-ounce can crushed pineapple, drained
- 3 medium bananas, sliced
- 1 cup butter, softened, plus more for pan
- 3 cups all-purpose flour, plus more for pan
- 3 cups sugar
- 5 large eggs
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup whole buttermilk
- 1 teaspoon lemon zest
- 1 teaspoon orange zest
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/4 teaspoon coconut extract
Grilled Holiday Honey Ham

Trim the ham of any excess fat, but leaving 1/4-inch of fat on the ham
- 1 (12 to 14-pound) fully-cooked, bone-in ham, preferably shank-end
- 2 tablespoons light brown sugar
- 1 tablespoon kosher salt
- 1 tablespoon freshly ground black pepper
- 2 teaspoons ground cumin
- 2 teaspoons ground ginger
- 1 teaspoon mustard powder
- 1 teaspoon ground cinnamon
- 1 stick (1/2 cup) butter
- 3 tablespoons chopped fresh thyme leaves
- 3/4 cup honey
- 1/4 cup apple cider vinegar
Creamed Spinach

In a medium saute pan over medium-high heat, melt butter and then add the olive oil
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 Vidalia onion, minced
- 1 clove garlic, minced
- 2 bunches spinach, stemmed and chopped
- Salt and freshly ground black pepper
- 1/4 teaspoon freshly ground nutmeg
- 1/4 cup heavy cream
Sunny's Highball Tiramisu

In a medium bowl whisk the espresso powder, water and whiskey together until the granules dissolve
- 6 tablespoons instant espresso powder (recommended: Medaglia D'Oro)
- 1 cup water, room temperature
- 8 ounces whiskey (recommended: Seagram's 7)
- 4 ounces mascarpone cheese
- 1/2 teaspoon vanilla extract
- 3/4 cup heavy cream, room temperature
- 1/4 cup sugar
- 8 ounces bittersweet chocolate, shaved
- 30 to 35 ladyfingers
- Special equipment: 6 highball glasses
