Double Chocolate Coca Cola Cake

In a saucepan, mix Coca Cola, oil, butter and cocoa and bring to a boil
- Frosting:
- 1 cup Coca Cola (real thing, not diet)
- 1/2 cup oil
- 1 stick butter
- 3 Tablespoon cocoa
- 2 cups sugar
- 2 cups flour
- 1/2 teaspoon salt
- 2 eggs
- 1/2 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 stick butter
- 3 Tablespoon cocoa
- 6 Tablesppon of cream or milk
- 1 teaspoon vanilla extract
- 3 3/4 cups confectioner's sugar
Pink Piggy Cupcakes

Preheat oven to 350 degrees F
- 1 1/4 cups cake flour
- 1/4 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 stick unsalted butter, softened
- 3/4 cup sugar
- 2 eggs
- 1/3 cup vegetable oil
- 1/2 cup buttermilk
- 1 teaspoon white vinegar
- 1 teaspoon vanilla extract
- 1-ounce red food coloring gel
- 4 ounces cream cheese, room temperature
- 1/2 stick unsalted butter, room temperature
- 1/2 teaspoon vanilla extract
- 3 cups powdered sugar
- 1 small squeeze red food coloring gel
- 6 marshmallows, cut in 1/2, for decorating
- 12 sugar gummy candies (pink or red slices) cut in 1/2, for decorating
- Black licorice string, for decorating, cut in 1/2-inch pieces
- 12 brown chocolate covered candies, for decorating (recommended: M and M's)
Emeril's Hash Brown Potatoes

Place the whole potatoes in a large pot, cover with water, and bring to a boil
- Substitute for Emeril's Original Essence:
- 5 medium baking potatoes, like russets (about 4 pounds), scrubbed
- 1/4 cup vegetable oil
- 3 tablespoons unsalted butter
- 1 cup diced yellow onions
- 1 cup diced mixed red and green bell peppers
- 2 teaspoons minced garlic
- 1 teaspoon Emeril's Original Essence or Creole Seasoning
- 1 teaspoon chopped fresh thyme
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon ground black pepper, or to taste
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
