Cornmeal-Fried Onion Rings

Peel the onions, slice them 1/2 to 3/4-inch thick, and separate them into rings
- 2 large Spanish onions (or 3 yellow onions)
- 2 cups buttermilk
- Kosher salt and freshly ground black pepper
- 1 1/2 cups all-purpose flour
- 1/4 cup (medium) yellow cornmeal
- 1 quart vegetable oil
Macaroni and Cheese

Preheat the oven to 350 degrees F
- 4 cups dried macaroni
- 1 whole egg
- 1/2 stick (4 tablespoons) butter
- 1/4 cup all-purpose flour
- 2 1/2 cups whole milk
- 2 heaping teaspoons dry mustard (more if desired)
- 1 pound sharp Cheddar, grated (not pre-grated cheese), plus more for baking
- Salt
- Seasoned salt
- 1/2 teaspoon ground black pepper
- Optional spices: cayenne pepper, paprika, thyme
- 1 pound thick-cut peppered bacon
- 3 yellow onions, halved and sliced
- 3 tablespoons butter
- 8 ounces gorgonzola
- Cooked sliders and/or macaroni and cheese, for serving
Peas and Pasta Salad

Cook the pasta in salted boiling water as directed on box for al dente, about 8 minutes
- 1 pound cavatappi pasta
- Kosher salt and freshly ground black pepper
- 1/4 cup finely chopped red onion
- 1 (15-ounce) jar salad dressing (recommended: Miracle Whip)
- 1 tablespoon apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 1/2 teaspoons sugar
- 10 ounces frozen peas, thawed
- 1/2 cup shredded sharp Cheddar cheese
- 6 slices bacon, cooked until crisp and crumbled
Peach Cobbler

- 10 ripe peaches
- 3 tablespoons almond liqueur
- 1 teaspoon nutmeg
- 2 cups brown sugar
- 1/2 cup granulated sugar
- 3 tablespoons corn starch
- 2 cups flour
- 1/4 cup granulated sugar, plus 1 1/2 tablespoons for the top
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 stick butter, cubed and chilled
- 3/4 cup buttermilk
- 1 egg white, for washing

- 3/4 teaspoon fine salt

Apple Pie Bread Pudding

To prepare the bread pudding, preheat the oven to 350°F
- Caramel Rum Sauce:
- 24-oz (1 loaf) challah bread, cut into 2" cubes
- 8 eggs
- 2 cups milk
- 2 cups heavy cream
- 1 cup white sugar
- 1/2 cup light brown sugar, packed
- 2-1/4 tsp ground cinnamon
- 2 tsp vanilla extract
- 6 Tbsp butter, melted
- 1/2 a 9" x 3" deep-dish apple pie, chopped into large chunks
- 1 (19.5-oz) jar caramel sauce
- 1 tsp rum extract
Garlic-Cheese Mashed Potatoes

Boil potatoes off in a large pot of salted water until tender
- 3 pounds red bliss potatoes, quartered and boiled fork tender
- 2 cups heavy cream
- 1 stick butter
- 6 cloves garlic smashed
- 8 ounces shredded Cheddar
- Cracked peppercorns
- Kosher salt
- Chives, for garnish
French Onion Soup paula deen

Saute onions and garlic in oil over low heat until tender and golden yellow
- 8 onions, sliced
- 2 cloves garlic, minced
- 1/3 cup olive oil
- 2 tablespoons all-purpose flour
- 8 cups beef stock
- 1/4 cup dry white wine
- 1/2 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper
- 1 loaf French bread
- 2 cups grated Gruyere
Beef with Snow Peas

In a bowl, mix together the soy sauce, sherry, cornstarch, brown sugar and ginger
- 1/2 cup low-sodium soy sauce
- 3 tablespoons sherry or cooking sherry
- 2 tablespoons cornstarch
- 2 tablespoons brown sugar
- 1 tablespoon peeled and minced fresh ginger
- 1 1/2 pounds flank steak, trimmed of fat and sliced very thin against the grain
- 3 tablespoons peanut or olive oil
- 8 ounces fresh snow peas, trimmed
- 5 whole scallions, cut into 1/2-inch pieces on the diagonal
- Crushed red pepper
- Salt, as needed (use sparingly!)
- Jasmine or long grain rice, cooked according to package directions
French Toast Bread Pudding

- 1 challah loaf, sliced 3/4 inch thick
- 8 extra-large eggs
- 5 cups half-and-half or milk
- 3 tablespoons honey
- 1 tablespoon grated orange zest
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- Confectioners' sugar and pure maple syrup, for serving
