Lasagna Rolls

To make the sauce: Melt the butter in a heavy medium saucepan over medium-low heat
- Sauce:
- 2 tablespoons unsalted butter
- 4 teaspoons all-purpose flour
- 1 1/4 cups whole milk
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- Pinch ground nutmeg
- Lasagna:
- 1 (15-ounce) container whole milk ricotta cheese
- 1 (10-ounce) package frozen chopped spinach, thawed, squeezed dry
- 1 cup plus 2 tablespoons grated Parmesan
- 3 ounces thinly sliced prosciutto, chopped
- 1 large egg, beaten to blend
- 3/4 teaspoon salt, plus more for salting water
- 1/2 teaspoon freshly ground black pepper
- 1 to 2 tablespoons olive oil
- 12 uncooked lasagna noodles
- 2 cups marinara sauce
- 1 cup shredded mozzarella (about 4 ounces)
Cookies - Big Soft Ginger Cookies

Preheat oven to 350 degrees F (175 degrees C)
- 2 1/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 3/4 cup margarine, softened
- 1 cup white sugar
- 1 egg
- 1 tablespoon water
- 1/4 cup molasses
- 2 tablespoons white sugar
Lasagna - Spinach Lasagna

Cook Lasagna noodles. In saucepan, cook mushrooms and onion in hot oil until tender, but not brown
- 10 lasagna noodles
- 2 cups fresh mushrooms, sliced
- 1/2 cup onion, chopped
- 1 tbsp vegetable oil
- 1 can (15 oz) tomato sauce
- 1 can (6 oz) tomato paste
- 1/2 cup black olives, chopped
- 1 1/2 tsp dried, crushed oregano
- 2 cups cottage cheese
- 1 lb fresh spinach, cooked and squeezed dry
- 1 lb Monterey Jack cheese, sliced
- 1/2 cup fresh parmesan cheese, grated
Slow Cooker - Macaroni and Cheese

Whisk together the milk, egg whites and cornstarch in your slow cooker insert
- 1-1/2 cups, 1% milk
- 2 egg whites
- 2 tsp. cornstarch or tapioca starch
- 4 oz. 2% sharp cheddar cheese (get the block and grate 1 cup full. That's about 4 oz.)
- 2 cups dry, penne whole wheat pasta
Pie - Tony's Chocolate Pecan Pie

Preheat oven to 350 degrees F
- 3 tablespoons butter, melted
- 3 eggs, beaten
- 3/4 cup brown sugar
- 2 tablespoons flour
- 1 teaspoon vanilla extract
- 3/4 cup dark corn syrup
- 3 tablespoons bourbon liquor
- 1 1/2 cups pecan halves
- 1/2 cup mini milk chocolate morsels
- 1 (9-inch) unbaked pie shell
- Homemade whipped cream, recipe follows
- 1 cup heavy cream
- 4 tablespoons confectioners' sugar
- 1 teaspoon vanilla extract
Cupcake Frosting - Strawberry

In a medium bowl, using an electric hand mixer, beat the butter until light and smooth
- 1/2 cup (1 stick) butter, at room temperature
- 4 cups powdered sugar, plus extra, as needed
- 1/4 cup whole milk, at room temperature
- 1 teaspoon pure vanilla extract
- 2 to 3 tablespoons strawberry fruit spread or jam
Pudding - Rice Pudding

Bring everything, except raisings, to a boil over medium heat
- 1 cup long grain white rice (Jasmine rice gives nice flavor)
- 5 cups 2% milk
- 1/3 cup sugar (white)
- 1/2 tsp salt
- 1/2 cup raisins
- 1 tsp vanilla
Loaf - Mock Chicken Loaf

Mix and bake at 325 degrees for 1 hour or until done
- 1 can chicken style soyameat - ground
- 1 med onion - minced
- 1 quart cottage cheese
- 1 cup cracker crumbs
- 2 tsp soy sauce
- 2 tsp mayonnaise
- 3 beaten eggs
Loaf - Chicken Loaf

Saute onion and celery in margarine
- 4 cups "chicken" ground, frozen
- 1 cup soft PF white bread, cubed
- 1 small onion, chopped fine
- 1 cup chopped celery
- 2 eggs
- 1/4 tsp thyme
- 1 tsp accent
- BROTH
- 1 cup less 1/8 cup boiling water
- 1 tbsp McKay's Chicken Seasoning
- 1 tbsp butter
Loaf - Grape Nut Roast

Combine all ingredients. Let stand for 20 minutes
- 1 cup Grapenut cereal
- 2 eggs, beaten
- 1 1/2 cup milk
- 1 tsp salt
- 3/4 cup finely chopped nuts
- 1 cup chopped celery
- 2 tbsp melted butter
