  • 1 yellow pepper
  • 6 sprigs of thyme
  • SALAD
  • 1 x 100g bag of pre-washed wild rocket
  • 1/2 lemon
  • PIRI PIRI SAUCE
  • 1/2 red onion
  • 2 cloves of garlic
  • 1-2 bird’s-eye chillies
  • 1 tbsp sweet smoked paprika
  • 1 lemon
  • 2 tbsp white wine vinegar
  • 1 lemon
  • 2 tbsp white wine vinegar
  • 1 tbsp Worcestershire sauce
  • A bunch of fresh basil
  • SEASONINGS
  • Olive oil
  • Extra virgin olive oil
  • Sea salt and black pepper
  • POTATOES
  • 1 medium potato
  • 2 sweet potatoes
  • 1/2 lemon
  • 1 fresh red chilli
  • A bunch of fresh coriander
  • 50 g feta cheese
  • TARTS (MAKES 6)
  • Plain flour, for dusting
  • 1 x 375g pack of pre-rolled puff pastry
  • Ground cinnamon
  • 125 g créme fraîche
  • 1 tsp vanilla paste or vanilla extract
  • 5 tbsp golden caster sugar

  • 2 Tablespoons Apply Brandy Or Apple Juice (optional)
  • 1 whole Granny Smith Apple, Peeled And Finely Diced

  • For the bulgur:
  • 4 4 SERVINGS
  • Ingredients
  • 2 2 2 cups unsweetened pomegranate juice
  • 1 1 1 cup medium-coarse bulgur
  • 1/4 1/4 1/4 cup dried cranberries
  • 1/2 1/2 1/2 teaspoon vanilla extract
  • 1-1/2 1-1/2 to cups fresh or frozen blueberries (no need to defrost if using frozen)
  • 1 1 1 teaspoon honey, or more as needed
  • 1 1 1 teaspoon finely grated orange zest
  • 1/2 to 1 1/2 to 1 1 teaspoon orange blossom water, or more as needed (optional)
  • finish:
  • 1 1 1 cup whole or low-fat Greek yogurt
  • 1 1 1 tablespoon honey, or more as needed
  • 1/4 1/4 1/2 cup pomegranate seeds (from about 1/2 small fruit) or blueberries, for garnish
  • Instructions

  • To 1/4 divide the bulgur between four bowls. Top each with 1/4 cup of yogurt and garnish with pomegranate seeds. Drizzle with more honey if you like. Serve warm.
