Peas, celery, hard-cooked egg, shredded cheddar, and pimentos combine to make "That
- 1 (20 oz.) package frozen peas (I used a 24 oz. package ~ I couldn't find a 20 oz.)
- 1 c. chopped celery
- 1/4 c. chopped green onions (I just put in the whole bunch of green onions, chopped)
- 2 hard-cooked eggs, chopped
- 1 c. shredded cheddar cheese
- 1 (2 oz.) jar pimentos, drained
- 1/2 c. mayonnaise
- 3 T. sweet pickle relish
- 1 tsp. sugar
- 1 tsp. ground mustard
- 1 tsp. seasoned salt (I used regular salt)

In a large dutch oven, cook bacon over medium high until crispy
- 5-6 slices bacon
- 1/4 cup butter
- 1 onion, diced
- 1 carrot, diced
- 1 clove garlic, minced
- 1/2 cup flour
- 6 cups chicken stock
- 3 pounds potatoes, peeled and chopped (I used reds)
- 1 pound cheddar cheese, shredded
- 1 cup heavy cream
- salt and pepper to taste
