  • 1 cup Ginger-Honey Rhubarb Compote
  • 3/4 cup (3 ounces) confectioners’ sugar
  • 2 teaspoon light rum
  • 1/2 teaspoon pure vanilla extract
  • Pinch of fine sea salt
  • 2 tablespoons reserved Ginger-Honey Rhubarb cooking liquid
  • 1/4 cup sliced almonds, toasted and partially crushed

Pour 2 baguettes, il vous faut

  • à 3 jours avant de déguster vos baguettes, préparer un levain avec :
  • 90 ml d'eau
  • 150 g de farine blanche
  • 1 c.à.c. de levain déshydraté
  • 0 ,5 c.à.c. de sel
  • 1 . Versez dans la cuve de la MàP (ou dans le bol du K.A.) l'eau et le sel.
  • 2 . Recouvrez de la farine et déposez par dessus le levain. Lancez le programme de pétrissage. Votre pâton doit être très élastique, limite un peu gluant. Ajustez les proportions de farine ou d'eau pour obtenir une texture idéale.
  • 3 . Une fois le programme fini, transvasez le levain ainsi obtenue dans un tupperware et conservez dans le bas du réfrigérateur 2 jours minimum.
  • Votre levain doit avoir la consistance d'un pâton élastique et non celle d'un poolish liquide.
  • J'ai tenté de réaliser des baguettes avec un levain datant de 8 jours, ça a très bien fonctionné.
  • Le jour J est arrivé ! Pour réaliser vos 2 baguettes, il vous faut :
  • 200 ml d'eau
  • 1 ,5 c.à.c. de sel
  • 1 c.à.c. de jus de citron
  • Votre levain préalablement préparé à l'avance
  • 350 g de farine blanche
  • 1 ,5 c.à.c. de levain déshydraté
  • 2 c.à.s. d'huile d'olive
