YELLOW LAYER CAKE WITH FUDGE FROSTING

Instructions First make the cake
- For the cake
- 2 and 1/4 cups flour
- 1 tsp baking soda
- 1/2 tsp salt, if using unsalted butter
- 1 cup butter, at room temp (230 gms)
- 1 and 1/2 cups caster sugar
- 2 eggs, at room temp
- 1 tsp vanilla extract
- 1/2 cup yoghurt, at room temp (preferably made of whole milk)
- 1 cup whole milk, at room temp
- For the frosting
- 2 cups icing sugar/powdered sugar
- 2/3 cup cocoa powder
- 6 tbsps butter, at room temp
- 6 to 8 tbsps cream (preferably whipping cream, which is thicker than regular cream)
- 2 tbsps milk, optional

- 250 g Camargue red rice or a mix of brown and red rice. I never use white rice in this dish as it will go too soft. The red rice and the wild rice takes much longer to cook and will have a better texture.

- 1 tsp vegetable bouillon (optional for extra flavour)
- half a red pepper

- 1 tsp Smoked Spanish Paprika to sprinkle over the chicken thighs
