let's do it Spray or line bread pan with parchment paper and preheat oven to 350 degrees
- 8 1/2 " x 4 1/2" x 2 1/2" bread pan, sprayed or lined with parchment paper
- 1/2 cup (1 stick) unsalted butter (room temperature)
- 1 cup granulated sugar
- 2 large eggs (room temperature)
- 2 Tbsp lemon juice (fresh squeezed)
- zest of 2 medium-sized lemons
- 1/3 cup buttermilk (room temperature)
- 1 1/2 cups all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract (optional)
- 1 cup fresh or frozen blueberries (defrosted)
- 1 tsp flour (for dusting blueberries)
- 2 Tbsp fresh lemon juice
- 2 Tbsp granulated sugar
- 3/4 cup powdered sugar
- 1 Tbsp lemon juice
- 1/4 tsp kosher salt

In a large soup pot, saute onions and red pepper in olive oil until slightly browned, about 5 minutes
- 1 tablespoon olive oil
- 1/2 white onion, diced
- 1 red pepper, diced
- 2 medium potatoes, diced
- 3 cups chicken broth
- 3 cups frozen corn
- 1/2 teaspoon salt
- 1/4 teaspoon dried thyme
