- 2 tbsp olive oil
- 1 tsp kosher salt
- 4-5 lbs meaty beef short ribs
- 1 large yellow onion chopped
- 5 large carrots chopped
- 6 cloves garlic chopped
- 2 tbsp flour
- 1/2 cup brandy
- 2 cups red wine medium-full bodied
- 2-3 cups chicken stock low or no sodium
- 1 14 oz can diced tomatoes
- 1 tbsp chopped fresh thyme
- 1 tbsp chopped fresh rosemary
- 2 leaves bay
- 1/2 cup halved kalamata olives
- 3 tbsp chopped fresh parsley
- salt and pepper to taste

Instructions Heat the Instant Pot on the Sauté setting
- 5 thick slices maple smoked bacon, cut in large pieces
- 3 lbs top sirloin, cut in large cubes

- Juice of two small limes (About 4 Tbsp)
- 2 large onions, diced
- 3 Pandan leaves, rinsed and knotted

- 2 tsp meat curry powder or garam masala
- 1 tsp mild chilli powder
- 1 tsp turmeric powder
- 2 cups coconut milk – not too thick
- 1 Tbsp veg / sunflower oil plus enough for shallow frying
