- 6 tablespoons unsalted butter (3/4 stick), at room temperature
- 1 medium yellow onion, finely chopped
- 1 small carrot, finely chopped
- 1/3 cup all-purpose flour
- 3 cups whole milk
- 1/4 cup finely chopped flat-leaf parsley
- 2 tablespoons minced chives
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1/2 pound hot-smoked salmon, skinned, deboned, and broken up into small pieces

- Anyway, here’s one of a number of recipes using breadcrumbs that I’ll post in the next few weeks.
- Fish Burger and Matchstick fries with lemon garlic mayo
- Ingredients:
- Fish burgers
- 4small4 small fillets of white fish (I used haddock)
- 22 eggs
- 50g50g plain flour
- 150g150g breadcrumbs (either fresh or shop bought – panko breadcrumbs are good)
- 2tbsp2 tbsp vegetable oil
- Salt and pepper
- 44 soft rolls
- 88 lettuce leaves (I used Little Gem)
- Fries:
