mediterranean chicken(tried & good)

Instructions Heat the oil in a large stove-top casserole dish or pot, then brown the chicken on both sides
- a couple of tablespoons of olive oil
- 8 chicken thighs
- 50 to 100 grams pancetta (I used diced from a thick slab)
- 1 onion, sliced into rounds
- 4 cloves of garlic, chopped
- A 400 gram/14 ounce tin of chopped tomatoes
- 2 bay leaves
- 1 and 1/2 teaspoons paprika
- a few sprigs of fresh thyme
- 500 ml (about 2 cups) chicken stock
- 125 ml (half a cup) red wine
- 2 red peppers, chopped into medium-sized pieces
- 1 heaped tablespoon of corn flour, for thickening
- 1 about 1 tablespoon of capers
- 10 about 10 black olives, pitted (I used lovely juicy Kalamata olives)
- feta cheese for crumbling over the dish (amount to taste)
- mashed potatoes, to serve ( marinated chicken in soya sauce, sherry), added mushrooms.

- 2 teaspoons pure vanilla extract
- 1/4 teaspoon pure almond extract
- Pinch fresh grated nutmeg
- 1/8 teaspoon fine sea salt

- 1 cup small onion / sambar vengayam, peeled
- 4 - 5 tomatoes, finely chopped
- 1/2 tsp turmeric powder
- salt to taste
- 1 tbsp tamarind paste
- 3 tbsp coriander leaves / cilantro, finely chopped

Instructions Sift the flour in the bowl of an electric mixer fitted with a hook attachment
- 750 gms – 3 cups all purpose flour
- 14 gms – 2 packets yeast
- 110 gms + 2 tsp sugar
- 70 gms – 5 tbsp milk
- 18 gms – 3/4 tbsp salt
- 53 gms – 3 3/4 tbsp butter, at room temperature
- 23 gms – 1 1/2 tbsp milk powder
- 300 gms – 1 1/4 cup water
- 490 gms – 4 1/3 sticks butter, divided in two (at room temperature)
