- 57 grams almond flour
- 115 grams powdered (confectioners) sugar
- 72 grams egg whites, aged, room temperature
- 36 grams granulated sugar
- Two drops ivory food coloring (preferably gel paste)
- For the custard filling:
- One 3.4 oz box instant vanilla pudding mix
- 1/2 cup coconut milk (boxed not canned)
- 1 cup heavy cream
- 1/2 cup shredded coconut, toasted

Place the flour, cocoa, sugar, and salt in a large mixing bowl and whisk to combine
- 1 cup all-purpose flour

- 4 tablespoons Sugar
- 2 Egg Yolks
- 4 tablespoons Crisco Shortening
- 6 tablespoons Ice Water
- 8 ounces Cream Cheese; softened
- 10 ounces Truwhip
- 2 tablespoons Jello Mix
- 1/3 cups Hot Water
- 1 cup Jam

Instructions Adjust the oven rack to the upper middle position and begin preheating the broiler
- 2 tbsp olive oil
- 1 medium yellow onion, diced
- 1/2 tsp kosher salt
- 5 cloves garlic, minced
- 1 28 oz can of whole tomatoes
- 1 tsp dried oregano
- 1/4 tsp dried red pepper flakes

- 1 lb extra large shrimp, peeled and deveined, leaving the tail on if you wish

- 6 oz feta cheese

I can honestly say that these cute little treats are super easy and quick to whip up
- 1 sheet of Pepperidge Farm puff pastry (half of a 17.3 oz package), thawed
- 1 egg
- 1 tablespoon of water
- 1/4 cup (20 gr) of shredded coconut
- 1/4 cup (25 gr) of sliced almonds
- 1/4 cup (50 gr) semi-sweet mini chocolate morsel (or shredded chocolate)

Slow Cooked Steak Diane Casserole - a great make-ahead meal, just thing if you're feeding a crowd!
- 2 tbsp vegetable oil
- 1.5 kg braising beef (casserole beef), chopped into bitesizechunks
- 3 heaped tbsp plain (all-purpose) flour (you can use gluten free plain flour if required)
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 large onion, peeled and chopped
- 4 cloves garlic, peeled and minced
- 2 tbsp tomato puree (tomato paste)
- 4 tbsp brandy or whisky
- 1 tbsp Worcestershire sauce
- 1 litre beef stock (3 stock cubes plus water is fine, or use homemade stock or bouillon for gluten free)
- 300 g (10 1/2 oz) chestnut mushrooms, thickly sliced
- 1 tbsp cornflour (cornstarch) mixed with 3 tbsp cold water, to make a slurry (optional)
- 120 ml (1/2 cup) double (heavy) cream
- small bunch fresh parsley roughly chopped
CHUNKY BEEF CHILI

This savory, hearty beef chili certainly didn’t cause any complaints when I served it last Sunday night
- 2 lbs. stewing meat, cubed
- Salt and pepper
- 2 tbs. olive oil
- 1 yellow onion, diced
- 1 red bell pepper, seeded and chopped
- 4 garlic cloves, chopped
- 3 tsp. chili powder
- 2 tsp. dried oregano
- 2 golden potatoes, scrubbed and cubed
- 1 (6oz) can tomato paste
- 3 (4.5oz) can chopped green chilies
- 4 cups beef stock
- 1 (14.5 oz) can stewed tomatoes
- 2 tsp. whole-wheat flour

Instructions Toast the pecans on a cookie sheet for about 7 minutes in a preheated 350 degree F oven
- 2 cup maraschino cherries, chopped in 1/2’s or 1/3’s (tossed in 1/4 cup flour at the very last minute)
