- Ingredients: to make about 18 arancini, serving about 6 people
- 4 cups (1 l) of vegetable (or chicken) broth - I used low sodium
- 2 cups (400 gr) of arborio rice
- 1 tablespoon (15 gr) of unsalted butter
- 1/2 cup, packed (50 gr) of grated Parmesan cheese
- 4 oz (100 gr) of diced ham
- 1 tablespoon of finely chopped fresh basil (or more if you like)
- 2 eggs
- 18 about 18 pieces (around 5.5 oz, 150 gr) of fresh mozzarella ciliegine *
- 3/4 about 3/4 cup (90 gr) of plain breadcrumbs
- vegetable oil to fry (I used about 4 cups = 1 liter of olive oil)

- 1 thinly slice red Thai chile or jalapeno chili,
