Salted Caramel Chocolate Cupcakes

For Cupcakes: 1. Preheat oven to 350 degrees F and place oven rack in center position
- FOR FILLING:
- FOR CUPCAKES
- 1 1/2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups sugar
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon baking powder
- 3/4 teaspoon salt
- 2 large eggs
- 3/4 cup buttermilk
- 3 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- 3/4 cup warm water
- Sea Salt for garnish
- 2 1/2 cups sugar
- 2/3 cup water
- 1 tablespoon light corn syrup
- 3/4 cup heavy cream
- 2 1/2 teaspoons sea salt
- FOR FROSTING:
- 1/2 cup plus 1 tablespoon unsweetened cocoa powder
- 1/2 cup plus 1 tablespoon boiling water
- 2 1/4 cups unsalted butter, room temperature
- 3/4 cup confectioners' sugar, sifted
- 1/4 teaspoon salt
- 1 1/2 lbs semi-sweet chocolate, melted and cooled
Italian Cream Cake

Instructions Preheat oven to 325 degrees F
- Cake:
- 1 teaspoon baking soda
- 1 cup buttermilk, room temperature
- 5 large eggs, separated and at room temperature
- 4 oz unsalted butter plus 1/4 teaspoon salt (omit salt if using salted)
- 1/2 cup shortening (3.5 oz)
- 2 cups granulated sugar
- 1 teaspoon vanilla
- 2 cups all purpose flour,
- 2/3 cup pecans, toasted and chopped
- 1 cup angel flake shredded, sweetened coconut ( 3.5 oz)
- Frosting:
- 12 tablespoons unsalted butter, softened plus 1/4 teaspoon salt (omit if using salted)
- 12 oz cream cheese, softened
- 2 teaspoons vanilla
- 5 1/2 cups powdered sugar, not sifted (about 1 1/2 pounds)
Penne with Chicken and Sun-Dried Tomatoes

Directions Preheat oven to 400
- Ingredients
- 6 tablespoons butter, plus more for baking dishes
- Coarse salt and ground pepper
- 1 pound penne rigate
- 1 teaspoon olive oil
- 2 boneless, skinless chicken breast halves (8 ounces each), halved horizontally
- 1/2 cup plus 2 tablespoons all-purpose flour (spooned and leveled)
- 4 garlic cloves, minced
- 6 cups whole milk
- 10 ounces white mushrooms, trimmed and thinly sliced
- 1/2 cup oil-packed sun-dried tomatoes, drained and thinly sliced
- 1 1/2 cups shredded provolone (6 ounces)
- 1 cup finely grated Parmesan (4 ounces)
Cranberry Orange Bread

Preheat oven to 350°. Sift all dry ingredients together
- 2 cups all-purpose flour
- 1 cup sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon good salt
- 3 Tablespoons unsalted butter (soft)
- 3/4 cup fresh-squeezed orange juice (about 3 oranges)
- zest of 3 large oranges (about 1 Tablespoon, packed)
- 1 egg
- 1 cup chopped fresh cranberries
- 1/3 cup chopped walnuts
Chocolate Peanut Butter Earthquake Cake

Preheat oven to 350 degrees F
- 1 box Chocolate Fudge cake mix, plus ingredients needed to prepare (eggs, oil, water)
- 1/2 cup butter
- 8 oz cream cheese, softened
- 1/2 cup creamy peanut butter
- 1/2 tsp vanilla extract
- 3 1/2 to 4 cups powdered sugar
- 1/2 cup chocolate chips
- 1 cup miniature chocolate peanut butter cups, halved
Cranberry Orange Tea Bread

- 2 C. all purpose flour
- 3/4 C. dried cranberries
- 1/2 C. sugar
- 2 tsp. baking powder
- 1 C. Mott's cinnamon apple sauce
- 1/4 C. (1/2 stick) butter or margarine, melted
- 1 egg
- 2 tsp. grated orange peel
