- 3 ounces prosciutto, chopped
- 2 cloves garlic, chopped
- 1 (15-ounce) can diced tomatoes
- 1/2 cup white wine
- 1 tablespoon fresh thyme leaves
- 1 teaspoon fresh oregano leaves
- 1/2 cup chicken stock
- 2 tablespoons capers
- 1/4 cup chopped fresh flat-leaf parsley leaves

- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon freshly ground black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons kosher salt
- 2 teaspoons dried thyme
- 1/2 teaspoon cayenne pepper
- 4 tablespoons (1/2 stick) butter, melted
- Your favorite sauce (such as barbecue sauce, ranch dressing, or blue cheese dressing), for serving, optional
- *Cook's Note: Wing tips may be reserved for making stock, if desired. Otherwise, discard tips.
