Layered Spring Omelet

In a medium saucepan, heat olive oil over medium heat
- 1 tablespoon olive oil
- 8 ripe tomatoes, seeded and cut into 1/2-inch dice
- 3/4 teaspoon coarse salt, plus more to taste
- 1/2 teaspoon freshly ground pepper, plus more to taste
- 21 large eggs
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon cayenne pepper
- 3 tablespoons unsalted butter
- •3/4 cup grated Vermont cheddar cheese
- •3/4 cup grated Gruyere cheese
- •2/3 cup loosely packed fresh basil leaves, torn in half
- •8 ounces spinach, leaves picked and torn in half
- •1 tablespoon chopped fresh thyme leaves
- •1 small leek, julienned, for garnish
- •2 tablespoons snipped fresh chives, for garnish
Crockpot Breakfast Casserole

I made this recipe. It is very good, but does not need to cook this long
- 1 32 oz. bag frozen hash brown potatoes
- 1 lb. of bacon diced, cooked and drained or 1 lb. cooked ham, cubed
- 1 medium diced onion
- 1 green bell pepper diced
- 1 1/2 C. shredded cheddar or Monterey Jack cheese
- 1 dozen eggs
- 1 C. milk
- 1 tsp. salt
- 1 tsp. pepper (more or less to taste)
Salmon with Nectarine-Red onion Relish

Combine first 11 ingredients and 1/8 teaspoon salt in a medium bowl, and well
- 2-1/2 cups coarsely chopped nectarines (about 3 medium)
- 1 cup coarsely chopped red bell pepper
- 1 cup coarsely chopped red onion
- 1/4 cup thinly sliced fresh basil
- 1/4 cup white wine vinegar
- 1/2 teaspoon grated orange rind
- 1/4 cup fresh orange juice
- 2 tablespoons minced seeded jalapeno pepper
- 2 tablespoons fresh time juice
- 2 teaspoons sugar
- 2 garlic cloves, minced
- 1/4 teaspoon salt, divided
- 1/2 teaspoon freshly ground pepper
- 4 (6-ounce) salmon fillets
- Cooking spray
Poppy Seed Cake

This was cousin Betty's recipe
- 1 box yellow cake mix
- 1 pkg instant coconut pudding, 3 oz. size
- (Note: You can substitute vanilla pudding if you wish)
- 4 eggs
- 1/2 cup oil
- 1 cup boiling water
- 1/4 cup poppy seeds.
Queen of Tarts Apple Pie

- 1 C. Flour
- 1/2 tsp. Salt
- ¼ tsp cinnamon
- 1/3 C. Shortening
- 3-4 Tbsp. Water
- Apple Filling
- 5 or 6 medium apples pared and quartered
- 1 Tbsp lemon Juice
- 1 cup firmly packed brown sugar
- 1/4 C. Flour
- 1/2 tsp. Cinnamon
- 1/8 tsp. Salt
- 1 Cup cream

Observations on this when I fixed it
- I pkg Pork sausage (your favorite)
- 2 bags (16 oz each) cole slaw mix
- 3 tablespoons fresh ginger, finely chopped
- 3 tablespoons fresh garlic, finely chopped
- 1 tablespoon black pepper
- 1 teaspoon salt
- 1 package (18-20 wrappers) egg roll wrappers
- vegetable oil for frying
- spicy mustard, sweet & sour sauce or soy sauce (your favorite)
Mediterranean Tuna Salad

On 2 individual serving plates evenly divide the salad ingredients
- Dressing Ingredients:
- 1/2 red tomato cut into wedges
- 2 oz. feta cheese crumbled
- 1/2 small red onion sliced
- 1/2 red pepper cut into strips
- 6 oz. can solid white tuna packed in water (drained)
- 1/4 cup kalamata olives
- 1/8 head of romaine lettuce (torn into bite size pieces)
- 1 tablespoons extra virgin olive oil
- 1 tablespoons lemon juice
- 1/2 tablespoon Dijon® Mustard
- 1/2 tablespoon minced fresh tarragon
- 1/8 teaspoon pepper

Beef Quesadillas

- 1 1/2 lbs. ground chuck
- 1 envelope fajita seasoning
- 2-3 C. shredded monterey jack cheese
- 1 (10-Count) package (8-inCh) flour tortillas
- 1 (16-oz..) jar salsa or taco sauce
- sour cream
Spinach Sausage Quiche

Pour into unbaked 9-inch pie shell and bake at 400 degrees for 1 hour 25-30 minutes
- 1 pkg. thawed Stouffer's Spinach Souffle
- 2 eggs
- 3 tbsp. milk
- 3 tsp. chopped onion
- 1/2 c. sliced drained mushrooms
- 3/4 c. cooked crumbled Italian sausage
- 3/4 c. grated Swiss cheese
