pudding - Dark Chocolate Quinoa Pudding

Place two cans of full-fat coconut milk in the fridge for at least 8 hours or overnight
- 3/4 - 1 cup coconut cream (depending on the consistency you prefer) + more for garnish
- 3/4 cup coconut water (or regular water, or a combination of the two)
- 1 cup cooked red quinoa
- 1/2 cup medjool dates, soaked for 5 minutes
- 1/2 cup raw cacao powder
- Pinch of sea salt
- Pinch of stevia (optional)
Quinoa Banana Oat Pancakes Recipe

Put all ingredients in large bowl and stir gently (Do not over stir or mixture will be tough)
- 1/2 cup cooked Quinoa
- 2 ripe bananas, mashed
- 2 Tbsp coconut oil, melted
- 2 Tbsp coconut sugar
- 1 Tbsp lemon juice
- 2 pastured eggs, well beaten
- 1 cup oat flour
- 1/2 tsp Baking Soda
- 1/2 tsp Sea Salt
- 1/2 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/2 cup coconut milk
- 1/2 C chopped walnuts

- 2 cups frozen sliced peaches
- 1 tablespoon cornstarch
- 1/2 tablespoon vanilla extract

Preheat oven to 325F and grease a 9x13 glass or ceramic pan
- 2 cups oat flour
- 1 cup golden flax seed
- 1/2 cup shredded coconut
- 1/2 cup whey protein unflavoured
- 1/2 cup swerve
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 tsp guar or xanthan gum
- 3 over-ripe bananas, mashed
- 1/3 cup coconut oil, melted
- 3 large eggs
- 3/4 cup milk
