oatmeal - Peanut Butter Breakfast Pudding

Cook the oats, salt, and milk (either on the stove or in the microwave)
- 1/2 cup rolled oats
- 1 cup milk of choice (I used almond)
- 1/4 tsp salt
- 1/2 a ripe banana
- 1-2 tbsp peanut butter (or other nut butter)
- 1/4 tsp pure vanilla extract
- sweetener (the amount will vary, depending on your tastebuds and what milk you use)
- optional: chocolate chips

1) Add walnuts and cashews to a blender and process for few seconds to get them finely ground
- 1/3 cup raw walnuts, ground
- 1/4 cup raw cashews, ground
- 2 TBSP linseed, ground (this is optional and if you don’t have you can sub with more walnuts or cashews)
- 1 tsp solid coconut oil
- 1 tsp liquid sweetener of choice – raw honey, agave, maple syrup (you can use less if you want, but make sure you use enough to make the dough sticky)
- 2 fresh dates, pitted and each chopped in 3
- To serve: nut meal of choice

In large bowl, cream butter and 2 cups sugar until fluffy
- 1 cup butter, softened
- 2 3/4 cup sugar, divided
- 2 tsp vanilla extact
- 4 eggs
- 3 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 cups (16 oz.) sour cream
- 2 Tbl. cinnamon
- 1/2 cup chopped walnuts.
Chocolate Peanut Butter Mousse Tarts (Low Carb and Gluten-Free)

For the crust, melt butter in a medium saucepan over low heat
- Crust:
- 1/4 cup butter
- 1/4 cup cocoa powder
- 3 tbsp granulated erythritol (or sugar)
- 1 large Safest Choice Egg, lightly beaten
- 1 cup almond flour
- 3/4 cup unsweetened, shredded coconut
- 1/2 cup chopped walnuts
- 1/2 tsp vanilla extract
- Filling:
- 8 oz cream cheese, softened
- 1 cup creamy peanut butter
- 1/2 cup whipping cream
- 1/4 cup powdered erythritol (or powdered sugar)
- 1/2 tsp vanilla extract
- Chocolate Glaze:
- 5 tbsp butter
- 2 oz unsweetened chocolate, chopped
- 2 tbsp powdered erythritol (or 1/4 cup powdered sugar)
- 1/4 cup cocoa powder
- 1/4 tsp vanilla extract
- 20 drops stevia extract (omit if using sugar)
pizza - cheese with cauliflower crust

Preheat oven to 450°F (220°C) and place a rack in the middle
- 1 small head cauliflower, cut into small florets (should yields about 3 cups once processed)
- 1/2 cup / 1.7 oz / 50 gr mozzarella cheese shredded
- 1 large egg, lightly beaten
- 1/2 teaspoon fine grain sea salt
- 1/2 teaspoon oregano
- pinch of ground black pepper
- Topping
- 2 ladlefuls tomato sauce
- 1/2 cup mozzarella cheese, shredded
- 1/2 teaspoon oregano

In a small mixing bowl, whisk together all dry ingredients and set aside
- 1/2 cup quinoa flour
- 1/2 cup brown rice flour
- 2 tablespoons arrowroot starch (I haven't tried these with tapioca or potato)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/2 cup coconut oil, softened
- 1 cup coconut sugar
- 1 flax egg (1 tablespoon flaxseed meal + 3 tablespoons water)
- 1 teaspoon vanilla extract
- 1/2 cup vegan chocolate chips

Combine the first three ingredients and mix together well
- 1/2 cup plain Greek Yogurt
- 1/4-1/3 cup rice krispies cereal (no salt or sugar added)
- 8 drops Vanilla Creme Sweetleaf Stevia

Mix together warm water, yeast and sugar or honey and set aside until foamy

- 1 1 1 Tbsp. yeast
- 2 2 2 Tbsp. sugar or honey

- 1 1/2 1 1/2 1/2 tsp. xanthan gum
- 1 1 1 tsp. salt
- 1/2 1/2 30-40 cup warm milk (dairy, nut, rice, soy) (Microwave for 30-40 seconds)
- 1/4 1/4 1/4 cup olive oil, canola oil or melted butter
- 2 2 2 1/2 or Flax eggs (Mix together 2 Tbsp. flax seeds with 1/2 cup water. Simmer until thickened.)
- 1 1 1 tsp. cider vinegar
