cake - pineapple nut cake

Sift together flour, baking soda, salt and cinnamon; set aside
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 cups sugar
- 3 eggs
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 20-ounce can crushed pineapple, with juice
- 1 1/2 cups finely chopped pecans or walnuts, divided (here's the nut grinder I use)
- 1 cup flaked coconut (optional)
- Cream Cheese Frosting
