casserole - Cauliflower & Sausage Casserole

Heat the oven to 350°F and lightly grease a 9x13-inch baking dish with olive oil
- 1 medium head cauliflower, about 2 pounds
- 1 teaspoon fine table salt
- 1 tablespoon olive oil
- 1/2 pound uncooked herbed chicken sausage OR spicy Italian sausage, removed from casings
- 1 medium onion, about 1/2 pound, diced
- 4 cloves of garlic, minced
- 2 stems fresh thyme, leaves only
- One 28-ounce can whole peeled tomatoes, drained and liquid reserved
- 2/3 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- Kosher salt and freshly ground pepper to taste

Preheat the oven to 350° F
- coconut oil for greasing baking dish
- 4 eggs
- 1/2 cup full-fat coconut milk
- 1/4 cup coconut butter
- 1/2 cup brewed coffee or espresso, as strong as you like
- 1/4 cup grade B maple syrup
- 1 tsp. vanilla extract
- 1/2 cup almond flour
- 1/2 cup + 1 Tbs coconut flour
- 1/2 tsp. baking soda
- pinch of sea salt
- 1 cup dark chocolate chips
- 1/2 cup unsweetened coconut flakes
Double Chocolate Salted Oats Cookies

Preheat oven to 350 degrees F
- 8 oz (2 sticks) butter
- 7 oz bittersweet chocolate
- 8 oz chocolate chunks or chips
- 1 C Rapadura
- 2 eggs
- 1 T vanilla extract
- 3 C oats (I prefer sprouted oats; rolled oats will also produce a great cookie)
- 2/3 C Organic Coconut Flour
- 2/3 C unsweetened shredded coconut
- 1 t Agar Agar powder (guar or xanthan gum may be substituted)
- 1/2 t baking soda
- 1 t fine sea salt
- Approximately 1 T Maldon Sea Salt (or other flat pressed salt)

Layer 1: Mix flour, butter and ½ cup pecans together
- 1 cup Flour
- 1/2 cup Butter (softened)
- 1/2 cup plus 1/4 cup Pecans, chopped
- 8 oz. Cream cheese, softened
- 1 cup Powdered sugar
- 3 cups Whipped topping, divided
- 2 1/2 cups Milk
- 3 sm pkgs. White chocolate instant pudding mix (or vanilla) - 3.4 oz. boxes
- 1 - 15 oz can Pumpkin puree
- 1 tsp. Pumpkin spice

- 1 1/2 cups blanched almond flour
- 1/2 cup golden flaxmeal

Preheat the oven to 350ºF
- 2 pints fresh blueberries, washed
- 1 tablespoon turbinado or raw sugar
- 2/3 cup quinoa flakes
- 2/3 cup GF millet flour
- 2/3 cup organic light brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon fine sea salt
- 1/2 cup virgin coconut oil

Mix all the peanut butter, date syrup, banana and stevia together until smooth
- 1 cup cooked quinoa
- 1/4 cup peanut butter
- 1/4 cup date syrup (or 3 tabs alternative syrup)
- Few drops stevia to taste
- 1 banana
- 1/4 cup hemp protein*
- 1/4 cup brown rice protein*
- 1/4 hemp seeds (I use unshelled for extra crunch factor)
- 1/4 cup cocoa powder
- 1 tsp vanilla bean powder or extract
- I used hemp protein and brown rice protein as my preferred protein options as they complement each other in texture and I typically like to use hemp wherever possible. Feel free to use your own preferred options.

- 2 heads organic cauliflower
- 3 pastured eggs
- 2 cups shredded raw parmesan
- 1 Tbsp Italian seasoning
