Flatbread - gluten free

Heat the grill to medium and dust a baking sheet with a little flour
- 200 g gluten free self-raising flour mix (I used Doves Farm mix which contains rice, potato, tapioca, maize and buckwheat flours)
- 1-2 tsp toasted cumin seeds
- 150 g soy yoghurt (or natural yoghurt)
- 50 ml water
- 1/2 tsp salt to taste
- 1 tbs nutritional yeast (optional- I added this but it was not in the original recipe)
- you could alternatively substitute the GF flour for spelt flour plus 3tsp baking powder.
cookie - Gluten Free Florentine Cookies

Position a rack in the center of oven and preheat to 350 degrees F
- 1 3/4 cups sliced , blanched almonds or hazelnuts (about 7 ounces)
- 3 tbsp Gluten Free flour blend or 2 tbsp tapioca starch + 1 tbsp rice flour
- zest of 1 orange (about 2 tbsp)
- 1/4 tsp fine salt
- 3/4 cup sugar
- 2 tbsp heavy cream
- 2 tbsp light corn syrup
- 5 tbsp unsalted butter
- 1/2 tsp Gluten Free vanilla extract
pancake/waffle - buckwheat and oat pancake or waffle

Preheat a large, heavy skillet over medium-low heat (or follow instructions for waffle maker)
- 1/2 cup buckwheat flour
- 1/2 cup oat flour
- 1 Tablespoon agave nectar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon xanthan gum
- 1/4 teaspoon salt
- 2 Tablespoons flax seed meal (optional)
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cardamom (optional)
- 1 cup buttermilk** or almond milk
- 2 Tablespoons coconut oil (melted)
- 1 large egg, well beaten or egg substitute
- 1/2 teaspoon pure vanilla extract

bar - Dark Chocolate Peanut Butter "Granola" Bars

Combine the vanilla, honey, peanut butter, and coconut oil in a saucepan over medium-low heat
- 1 teaspoon vanilla
- 1/4 cup raw honey
- 1/2 cup natural unsweetened peanut butter (or almond butter)
- 2 tablespoons coconut oil
- 1/2 cup raw almonds
- 1/2 cup raw walnuts
- 1/2 cup raw pecans
- 1/2 cup raw cashews
- 5 medjool dates
- 1/4 cup sunflower seeds
- 1/4 cup shredded coconut, unsweetened
- 1/4 cup 80% cacao dark chocolate chips (omit for SCD)

Place all of the ingredients into your Vitamix and puree for about a minute unitl smooth and creamy
- 1/4 cup filtered water
- 1/4 cup cold-pressed extra-virgin olive oil
- 1 cup organic raw cashews soaked for 2 hours (soaking is optional)
- 1/4 cup raw cauliflower
- 3 Tbsp lemon juice or more to taste
- 1 1/4 tsp yellow mustard (like you put on hot dogs)
- 1 tsp raw coconut nectar or coconut sugar or 1 chopped pitted date
- 1 tsp apple cider vinegar
- 1/4 teaspoon Celtic sea salt or more to taste

Preheat oven to 400 degrees with the wrack near the top
- 1 1/4 pounds minced chicken
- 2 tablespoons onion, chopped
- 1/2 cup Parmesan
- 1/2 cup breadcrumbs
- zest of 1/2 lemon
- 1 tablespoon parsley, chopped
- 1 minced clove garlic
- 1 tsp fennel seeds
- 1 egg, whisked

- 1 cup + 2 tablespoons creamy peanut butter (i.e. one heaping cup - I prefer creamy honey roasted; plain or crunchy may be used; do not use natural or homemade peanut butter - see below)
