cookie - coconut chocolate chip cookie

For the cookies, preheat the oven to 325F and line a large baking sheet with parchment paper or a silicone liner
- 1 1/4 cups almond flour
- 3/4 cups finely shredded, unsweetened coconut
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup butter, softened
- 1/2 cup Swerve Sweetener (you can use other erythritol, but I can't guarantee the same results)
- 2 tsp molasses (optional)
- 1/2 tsp vanilla extract
- 1 large egg
- 3.5 oz high % cacao chocolate, finely chopped OR Homemade Sugar-Free Chocolate Chips
Bars - Almond Butter Fudge Bars

Line a 13 by 9 by 2-inch pan with foil
- 1 cup (2 sticks) butter or margarine, softened
- 1 cup crunchy almond butter
- 3 cup confectioners’ sugar, sifted
- 1 1/2 cup gf graham cracker crumbs (see note above)
- 1 1/2 cup semisweet chocolate chips
quickbread - CREAM CHEESE BANANA NUT BREAD

Beat butter and cream cheese until creamy
- 3/4 C. Butter, softened
- 8 oz. pkg. cream cheese, softened
- 2 C .Sugar
- 2 large eggs
- 3 C. all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 C. mashed bananas (about 4 bananas)
- 1 C. Chopped Nuts
- 1/2 tsp. Vanilla

1. Place nuts and pepitas in a food processor and pulse a few times to grind fairly fine
- 1 cup Medjool Dates (about 9-10 large dates), pitted
- 1/2 cup Unsalted Cashews
- 1/4 cup Raw Walnuts
- 1/4 cup Raw Pepitas (Shelled Pumpkin Seeds)
- 1/4 cup Cacao Powder

Combine 1/2 cup coconut milk, bananas, 2 tablespoons honey and 1/2 teaspoon vanilla extract in food processor
- 1 (15 ounce) can coconut milk*
- 2 large bananas
- 3 tablespoons honey*
- 1 teaspoon vanilla extract
- 1 tablespoon shredded coconut
- You may use regular or almond milk instead of the coconut milk. And you may substitute the honey for maple syrup.
dressing - sweet sesame

- 2 tablespoons maple syrup
- 3-4 tablespoons lemon juice or apple cider vinegar
- 1-2 tablespoons extra virgin olive oil
