Peanut Butter Quinoa Cookies Gluten Free

Preheat oven to 350ºF. Line a baking sheet with parchment paper
- In a large mixing bowl, whisk together:
- 1 cup sorghum flour
- 1 cup Ancient Harvest Quinoa Flakes
- 1/4 cup organic millet flour, or buckwheat flour
- 1 tablespoon tapioca starch
- 1/2 teaspoon fine sea salt
- 2 teaspoons baking powder
- 1/2 teaspoon xanthan gum
- 1/2 teaspoon Authentic Foods Vanilla Powder (or use 2 teaspoons bourbon vanilla extract)
- Add in:
- 1 cup organic golden brown sugar
- 1/4 cup honey or organic raw agave (to keep it strictly vegan)
- 1 cup organic chunky peanut butter
- 1 tablespoon Ener-G Foods Egg Replacer whisked with 1/4 cup warm water till frothy
- 2-4 tablespoons rice milk or nut milk (start with less, add one spoon at a time)

Preheat your oven to 350°F
- 1 3/4 cups (245 g) all-purpose gluten free flour (I used Better Batter)
- 6 tablespoons (54 g) cornstarch
- 1 teaspoon xanthan gum (omit if your blend already contains it)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon kosher salt
- 1/2 cup (100 g) granulated sugar
- 6 tablespoons (84 g) virgin coconut oil, melted and cooled (can use vegetable shortening, melted and cooled, or unsalted butter at room temperature)
- 1/2 cup (168 g) honey
- 1 teaspoon pure vanilla extract
- 1/2 cup (4 fluid ounces) milk, at room temperature (any kind)
- 3 tablespoons (42 g) plain yogurt or sour cream, at room temperature
- 3 eggs (180 g, out of shell) at room temperature, beaten
Gluten Free Oat Flour Carrot Cake Muffins

Looking for a quick bread for gluten-free and nut-free diets? These carrot muffins made with oat flour are so good,
- 1 1/2 cups oats, ground into flour, or 1 cup oat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1/8 to 1/4 teaspoon powdered stevia extract (use more for a sweeter muffin)
- 3/4 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/8 teaspoon cardamom
- 1/3 cup buttermilk or homemade buttermilk (add 1 teaspoon lemon juice or apple cider vinegar to a measuring cup, then add enough milk to equal 1/3 cup.)
- 1 tablespoon oil
- 2 tablespoons honey or maple syrup
- 1 egg, lightly beaten
- 1/2 teaspoon vanilla
- 3/4 cup carrot, finely grated
- 1/4 cup raisins, optional
