Dip: Spinach Dip

1.In medium bowl stir spinach, sour cream, mayonnaise, soup mix, and green onions until well mixed
- 1 pkg (10 oz) frozen chopped spinach, thawed and drained
- 1 container (16 oz) sour cream
- 1 cup Mayonnaise
- 1 pkg KNORR Vegetable Soup, Dip & Recipe Mix
- 3 green onions, chopped
Whoopee Pie

Preheat oven to 350 degrees F
- 1 1/2 cups sugar
- 1/2 cup butter
- 2 eggs
- 1/4 cup vegetable oil
- 1/2 tablespoon vanilla extract
- 3 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 3/4 tablespoons baking soda
- 1/2 teaspoon salt
- 1 1/2 cups milk

Meatballs with Cream Sauce

In a bowl, combine all of the meatball ingredients EXCEPT the beef and flour
- Meatballs:
- 1 egg, lightly beaten
- 1/4 cup milk
- 2 T. ketchup
- 1 t. Worcestershire sauce
- 3/4 cup quick oats
- 1/4 cup finely chopped onion
- 1/4 cup minced fresh parsley
- 1 t. salt
- 1/4 t. pepper
- 1 1/2 lb. lean ground beef or lean ground turkey
- 3 T. flour
- Cream Sauce:
- 2 T. butter
- 3 1/2 T. flour
- 1/4 t. dried thyme
- 1/4 t. salt
- 1/8 t. pepper
- 14 oz. can chicken broth (If you want your sauce thicker, cut down the chicken broth to 1 cup)
- 2/3 cup milk
- 2 T. minced fresh parsley
Quick Bread: Juice Pulp

Preheat the oven to 350 degrees F; spray a 9-by 5-inch loaf pan with nonstick cooking spray (see Cook's Note)
- 1 1/2 1 1/2 1/2 cups fruit and vegetable pulp leftover from a juicer (See Note)

Rice: Chip's Wild Rice Hotdish

Wash rice thoroughly, soak for a couple of hours or overnight in water or chicken broth
- 1 cup wild rice
- 1/2 lb bacon, fried and cut into small pieces
- 1/2 cup eelery, chopped
- 1/2 cup onion, chopped
- 1/2 cup green or red bell pepper, chopped
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 can cream of mushroom soup
- 1/2 can milk

- 1cup1 cup (7.5 ounces) granulated sugar
- 2/3cup2/3 cup (2.5 ounces) unsweetened cocoa powder
- 2teaspoons2 teaspoons baking powder
- 1/2teaspoon1/2 teaspoon baking soda
- 1/2teaspoon1/2 teaspoon salt
- 1 1/2cups1 1/2 cups (9 ounces) semisweet chocolate chunks (or chocolate chips)
- 2large2 large eggs
- 1 1/2cups1 1/2 cups buttermilk (or 3/4 cup milk whisked together with 3/4 cup sour cream or yogurt)
- 1teaspoon1 teaspoon vanilla extract
- 1/2cup1/2 cup vegetable, canola or melted coconut oil
- 1/2cup1/2 cup (3 ounces) chocolate chunks for sprinkling on top
- Note: Filling muffin pan 2/3 full yields close to 24 muffins that rise almost to the top of the pan. Instructions say to fill all the way to the top, but I haven't tried that yet.
Glazed Roast Chicken

For our roast chicken recipe, we wanted an evenly glazed chicken with crisp skin and moist meat
- Chicken:
- 1 1 to 7 chicken (6 to 7 pounds), giblets removed and discarded
- 5 5 to 2 1/2 salt (If using table salt, reduce the amount to 2 1/2 teaspoons)
- 1 1 1 teaspoon baking powder
- 1 1 1 teaspoon ground black pepper
- 1 1(16-ounce) can 1(16-ounce) can beer (see note)
- Glaze:
- 1 1 1 teaspoon cornstarch
- 1 1 1 tablespoon water
- 1/2 1/2 1/2 cup maple syrup
- 1/2 1/2 1/2 cup orange marmalade (see note)
- 1/4 1/4 1/4 cup cider vinegar
- 2 2 2 tablespoons unsalted butter
- 2 2 2 tablespoons Dijon mustard
- 1 1 1 teaspoon ground black pepper
- 2 Taste your marmalade before using it; if it is overly sweet, reduce the amount of maple syrup in the glaze by 2 tablespoons. Trappist Seville Orange Marmalade is the test kitchen’s preferred brand.
