- Be careful not to overreduce the glaze in step 3. If the glaze thickens to the correct consistency before the chops reach 140 degrees, add a few tablespoons of water to the pan. We prefer fresh thyme here, but dried can be substituted.
- INGREDIENTS
- 4 boneless center-cut or loin chops, 3/4 to 1 inch thick
- Salt and pepper
- 1/2 cup maple syrup
- 2 teaspoons Dijon mustard
- 1/4 cup cider vinegar
- 1 teaspoon minced fresh thyme
- 1 tablespoon vegetable oil

Mother's Famous Chinese Egg Rolls Recipe

Once you make these egg rolls, you'll never make them any other way! Make sure you get the correct egg roll wrapper...
- 50 Spring/Egg Roll Wrappers (about 2 packages), defrosted unopened at room temperature for 45 minutes or in the refrigerator overnight
- 1 tablespoon cornstarch (or flour) mixed with 1/4 cup of cool water to seal egg roll
- Oil, for frying
- FOR THE GROUND PORK
- 1 pound ground pork
- 1 tablespoon soy sauce
- 1 teaspoon cornstarch
- 1/4 teaspoon sugar
- freshly ground black pepper
- FOR THE VEGETABLES
- 2 to 3 cloves garlic, very finely minced
- 1/2 head of cabbage (about 11 ounces)
- 3 carrots, shredded
- 1 teaspoon grated fresh ginger

- Buttery Vanilla Glaze:
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 large egg, at room temperature
- 1/2 cup buttermilk
- 1/4 cup unsalted butter, softened
- 1 1/2 teaspoons vanilla extract
- 1 cup frozen or fresh blueberries (if using frozen, keep them unthawed and add them frozen)
- 1/3 about 1/3 cup jam (I used strawberry; use your favorite flavor)
- 3 tablespoons sugar, for sprinkling (I used 1 tablespoon turbinado and 2 tablespoons granulated)
- 1/4 cup unsalted butter, melted
- 1 about 1 cup+ confectioners' sugar (sift if it's particularly lumpy)
