Muffins: Lemon Blueberry or Lemon Poppyseed

Heat oven to 400. Grease muffin pan or line with paper cups
- MUFFINS:
- 2 cups + 1 tablespoon all purpose flour (for blueberries, if using. Omit the 1 tablespoon if making lemon poppyseed muffins)
- 1 cup sugar
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup sour cream or yogurt (depending on thickness of sour cream/yogurt, you may need to add 1-2 Tbsp more of milk)
- 2 tablespoons milk
- 2 tablespoons lemon juice
- 1/4 cup canola oil
- 1 egg
- Zest of 1/2 a lemon
- 1/2 teaspoon lemon extract
- 1/2 teaspoon vanilla extract
- 1 1/2 cup dried blueberries, if using
- 1/4 cup poppy seeds, if using
- TOPPING:
- 1/2 cup sugar
- 1 1/2 Tbsp. brown sugar
- 3/4 cup flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 cup vegetable oil
- 1 Tbsp. vanilla

- 6 pounds apples (12 cups)
- 2 cups sugar
- 1/4 cup flour
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon nutmeg

For frosting, combine ½ cup brown sugar, 4 tablespoons half & half and 2 tablespoons butter in 1½ quart saucepan
- Frosting:
- 1/2 cup firmly packed brown sugar
- 4 to 5 tablespoons half & half
- 2 tablespoons butter
- 2 1/2 to 3 cups powdered sugar
- 1 teaspoon vanilla

- Marinade:
- 1/4 teaspoon lime zest
- 2 limes, juiced
- 1 tablespoon honey
- 1 small shallot, chopped
- 1 jalapeno, chopped and seeds removed
- 1 garlic clove, chopped
- 1/2 cup olive oil
- Salt
- Pineapple Salsa:
- 1/2 pineapple, diced and cored, juices reserved
- 1 tomato, diced
- 1/2 red onion, minced
- 1/2 small jalapeno, diced
- 1 tablespoon chopped cilantro leaves
- 1 lime, juiced
- Salt and pepper

Combine all of the ingredients in a blender on low speed for 30 seconds
- 1/2 cup white vinegar
- 1/3 cup water
- 1/3 cup vegetable oil
- 1/4 cup corn syrup
- 2 1/2 Tbsp. grated Romano cheese
- 2 Tbsp. dry pectin
- 2 Tbsp. beaten egg or egg substitute
- 1 1/4 tsp. salt
