Cookies: Homemade Thin Mints

Preheat the oven to 325 degrees
- 1 cup all-purpose flour, plus more for surface
- 1/2 cup unsweetened Dutch-process cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 5 tablespoons butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 3/4 teaspoon pure peppermint extract
- Peppermint candies, crushed (optional)
- 2 pounds white chocolate, semi-sweet chocolate, dark chocolate, or Andes mints, coarsely chopped (for dipping)
Waffles: Gingerbread Waffles with Maple Butter

Full of spices and topped with rich maple butter, these waffles are the perfect thing for holiday gatherings
- For the Maple Butter:
- 6 tablespoons unsalted butter, softened
- 1 1/2 tablespoons pure maple syrup
- Pinch of salt
- Pinch of cinnamon
- For the Gingerbread Waffles:
- 2 large eggs
- 1 1/2 cups whole milk
- 1/2 cup unsalted butter, melted, or 1/2 cup canola oil
- 3 tablespoons dark molasses
- 1 teaspoon pure vanilla extract
- 1 1/2 cups all-purpose flour
- 3 tablespoons firmly packed brown sugar
- 1 tablespoon baking powder
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- Warm maple syrup for serving (optional)
Cocoa: Crockpot Hot Cocoa for a Group (2 ways)

In large saucepan, combine sugar, cocoa and salt
- 1-1/2 cups granulated sugar
- 1-1/4 cups cocoa powder
- 1-1/4 teaspoons salt
- 3/4 cup hot water
- 1 gallon milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon, optional
- or
- 1.5 cups whipping cream
- 1 14oz can sweetened condensed milk (can also half evaporated milk or coconut milk)
- 6 cups milk
- 1 teaspoon vanilla
- 2 cups of chocolate chips (milk chocolate OR semi-sweet depending on how sweet you like it)

- 2 1/2 cups heavy cream
- 1 1/2 cups low-sodium chicken broth
- 2 1/2 pounds Yukon Gold potatoes, peeled and cut into 1/2-inch cubes (see note)
- 1/8 teaspoon fresh grated nutmeg
- Salt and pepper
- 1/2 teaspoon grated zest and 1 teaspoon lemon juice from 1 lemon
- 5 cups frozen shredded hash brown potatoes, thawed and patted dry with paper towels (see note)
- 3/4 cup Parmesan cheese, grated

- 3 cups old-fashioned rolled oats (can also do a combo of 2 cups rolled oats & 1 cup quick-cook oats)
- 1 cup almonds, roughly chopped
- 1 cup cashews, roughly chopped
- 3/4 cup shredded sweetened coconut
- 1/4 cup plus 2 tablespoons dark brown sugar
- 1/4 cup plus 2 tablespoons pure maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon coconut extract (optional)

- 1 (12-ounce) bag semisweet chocolate chips
- 1 cup butter (2 sticks)
- 1 1/2 cups granulated sugar
- 1 teaspoon vanilla
- 4 large eggs
- 1 1/2 cups flour
- 1/2 teaspoon salt
- Oreo Truffle and Topping:
- 26 Oreo or other chocolate-sandwich cookies
- 8 ounces cream cheese, light or regular, softened
- 4 ounces white chocolate or white almond bark (might need to add shortening to soften chocolate)
