In a medium skillet, heat 3 Tbsp olive oil over medium high heat
- 1/4 cup plus 3 Tbsp extra virgin olive oil
- 1 lb shrimp, peeled and deveined
- 1 shallot, finely chopped
- 2 Tbsp red wine vinegar
- 1 Tbsp spicy mustard
- 1 Tbsp honey
- Salt and pepper
- 8 oz spinach
- 1/2 cup feta cheese

- 1-3/4 cups all-purpose flour
