Cook noodles according to package directions
- 4 c. uncooked egg noodles
- 4 c. cubed cooked chicken
- 1 pkg. (16 oz.) frozen peas and carrots
- 2 c. milk
- 2 cans (10-3/4 oz. each) condensed cream of celery soup, undiluted

Roasted Garlic, Poblano, and Red Pepper Guacamole with Homemade Tortilla Chips

- Guacamole:
- 6 garlic cloves, unpeeled
- 1 red bell pepper
- 1 poblano chile
- 1/4 cup finely chopped green onions
- 2 tablespoons chopped fresh cilantro
- 2 teaspoons fresh lime juice
- 1/4 teaspoon kosher salt
- 1 ripe peeled avocado, coarsely mashed
- Chips:
- 6 (6-inch) corn tortillas, each cut into 8 wedges {Check for Gluten}

For the Cheese Batter: Use a handheld electric mixer to beat together all ingredients until smooth and creamy

- 1 teaspoon pure vanilla extract
- 1 1/4 cups all-purpose flour
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/8 teaspoon cloves
- Other:
- Butter, to grease the pans
Super Skinny Pizza Pinwheels

Servings: 8 pizza pinwheels Calories: 115 calories each Weight Watchers Points Plus: 4 pp per pizza pinwheel
- 1 package seamless crescent roll dough (*see note below)
- 1/2 cup pizza OR spaghetti sauce
- 1 tsp basil/oregano mix OR Italian seasoning blend
- 1/2 tsp garlic powder
- 1/4 cup turkey pepperoni’s. sliced into quarters (or you could use mini turkey pepperonis)
- 1/8 cup Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- (*Note on seamless crescent dough: Pillsbury makes this product, but if you can’t find it, you can buy reduced fat crescent rolls, and use a rolling pin to seal the ’seams’ together)
White Bean Chicken Chili

Servings: about 8 (1 cup) servings Calories: 165 per serving ~ (1 cup= 1 serving) *2 cups makes a very filling me
- 1 (32 oz) box chicken broth
- 1 (11 oz) can white corn
- 2 - (15 oz) cans Great Northern Beans
- 1/2 cup fat free sour cream
- 1 medium onion, chopped
- 1 (4 oz) can green chiles, chopped
- 1 (14 oz) can diced tomatoes
- 1 tsp garlic powder
- 1/8 tsp pepper
- 1 packet White Bean Chili seasoning mix (or 1-2 tbs chili seasoning)
- 1.25 lbs boneless/skinless chicken breast
- Optional: To garnish: 1/2 bunch cilantro leaves, chopped, pinch of sugar substitute (I like the subtle sweet flavor it adds!)
