Pita Bread Salad with Cucumber, Mint & Feta

- 2 small pita breads (cut into 1-inch squares)
- 3 Tbsp white wine vinegar
- 1/4 cup extra-virgin olive oil
- Salt, to taste
- 3 stalks celery, cut into 1/2-inch dice
- 1 cucumber, peeled, seeded, and cut into 1/2-inch dice
- 1 bunch fresh mint, trimmed and thinly sliced
- 1/2 bunch watercress, trimmed
- 6 oz. light feta cheese, crumbled (I found this at Trader Joes)
- Pepper, to taste
Tortilla Mix

Combine dry ingredients in a bowl and stir with whisk to fully mix
- 16 C. flour (use unbleached or add up to 1/2 whole wheat)
- 2 Tbsp. baking powder
- 2 Tbsp. salt (you can use a little less, but some salt really does make a difference in the flavor)
- 1/2 C-1C. shortening (I like about 3/4 C. of palm shortening (no trans fat!))
BBQ Chicken Kebabs

In a large bowl, toss the chicken and salt together
- 2 pounds boneless, skinless chicken thighs or breasts, trimmed of excess fat and cut into 1-inch cubes
- 2 teaspoons kosher salt
- 1 1/2 tablespoons sweet paprika
- 4 teaspoons sugar
- 2 teaspoons smoked paprika
- 2 slices bacon, cut into 1/2-inch pieces
- 4 12-inch metal skewers or 6 wooden skewers, soaked in water for an hour
- 1 cup BBQ sauce
Monterey Ranch Bread

In a bowl, combine the cheese and salad dressing; set aside
- 2 cups (8 ounces) shredded Monterey Jack cheese
- 3/4 cup ranch salad dressing
- 1 loaf (1 pound) unsliced French bread
- 2 tablespoons butter, melted
- Minced fresh parsley
Chocolate Covered Strawberry Shake

Combine ingredients in blender
- 1/2 scoop each Designer Whey Strawberry & Chocolate
- 1 cup unsweetened almond milk
- 1 cup frozen strawberries
- 1 tsp cocoa powder
- 1 pkt stevia- sweetened to taste.
Chicken Enchilada Puffs

Preheat oven to 375 degrees and line cookie sheet with foil
- 1 pkg. jumbo crescent rolls
- 3 oz. cream cheese
- 1/2 c. Mexican blend shredded cheese
- 3/4 c. cooked shredded chicken
- 1/3 c. enchilada or taco sauce
- 2-3 tsp. enchilada or taco seasoning mix
- 1/4 c. Mexican blend shredded cheese, for sprinkling
Protein Packed S’mores Ice Cream

- 1 cup almond milk or skim milk (I used vanilla Almond Breeze)
- 1 cup fat free cottage cheese, or plain low-fat greek yogurt
- 3 tbs cocoa powder OR 3 tbs sugar free chocolate pudding mix
- 2 tbs marshmallow fluff OR 2 tbs light cool whip
- 4 packets stevia (or 1 tbs sweetener of choice, or to taste)
- 1 graham cracker square, crushed into fine crumbs
- Optional Toppings: Fat free whip cream, 10 mini marshmallows, and/or 2 squares hershey’s chocolate, roughly chopped (to garnish).

- 1/2 cup Sugar Free Maple Syrup (there are many natural brands at many Whole Foods stores if you would prefer, or you could use light syrup)
- 1 tbs Light Butter
- 3 tbs Cinnamon
- 1/4 cup sugar substitute of choice (I used 2 tbs stevia)
Baked Zucchini Sticks and Sweet Onion Dip

1) To make the dip: Melt the butter in a medium frying pan over moderate heat, and add the sliced onions

- 3 medium zucchini, unpeeled, cut into 3"-long stick
