Roast Beef and Feta Pitas with Cucumber Sauce

Combine feta, sour cream, cucumber and lemon juice in medium bowl
- 1/4 C crumbled feta cheese
- 1/3 C red fat sour cream
- 1 medium cucumber, peeled, seeded and coarsely shredded
- 1 1/2 t lemon juice
- 1/4 t pepper
- 4-6 1/2" whole weat pita bread rounds, cut in half and warmed
- 8 fresh spinach leaves, washed and stems removed
- 12 oz sliced deli lean roast beef
- 8 fresh tomato slices
Banana-Bran Muffins

1. Preheat oven to 400°F
- 2 large eggs
- 2/3 C packed light brown sugar
- 1 C mashed ripe bananas, (2 medium)
- 1 C buttermilk, (see Ingredient notes)
- 1 C unprocessed wheat bran, (see Ingredient notes)
- 1/4 C canola oil
- 1 t vanilla extract
- 1 C whole-wheat flour
- 3/4 C all-purpose flour
- 1 1/2 t baking powder
- 1/2 t baking soda
- 1/2 t ground cinnamon
- 1/4 t salt
- 1/2 C chocolate chips, (optional)
- 1/3 C chopped walnuts, (optional)

- 3 egg whites
- 2 slices turkey bacon, cooked
- 1 T chopped green pepper

Fettuccine with Turkey Bolognese Sauce

1.In 12-inch skillet, heat oil on medium until hot
- 1 T olive oil
- 1 medium onion, chopped
- 1 medium carrot, chopped
- 1 stalk celery, chopped
- 1 clove garlic, crushed with press
- 1 can (28-ounce) crushed tomatoes
- 1/4 tsp (plus additional for pasta water) salt
- 1/4 tsp coarsely ground black pepper
- 1/2 C whole milk
- 2 C chopped leftover cooked turkey
- 1 package (16-ounce) fettuccine or linguine
- 1 C(loosely packed) fresh parsley leaves, chopped
- 1/2 C freshly grated Parmesan cheese
Turkey-Porcini Tetrazzini

1.Preheat oven to 325 degrees F
- 1 package (1-ounce) dried porcini mushrooms
- 2-1/2 C large pieces of roast turkey
- 8 ounces wide egg noodles, cooked
- 3 T olive oil
- 3 T finely chopped shallots
- 1 tsp chopped thyme leaves
- 1 pinch cayenne pepper
- 3 T all-purpose flour
- 2-1/2 C milk
- 1 T cognac, quartered
- 1/4 tsp salt

Sweet Potato and Black Bean Burrito

Vegetarian burritos are filled with a puree of sweet potatoes, black beans, onions, chiles, garlic, and cilantro
- 5 C peeled cubed sweet potatoes
- 1/2 t salt

- 1 C chopped green onions
- 1/2 C chopped tomatoes
- 8 t olive oil
- 8 oz shredded cheese
- 1 lb turkey sausage
- 8 large eggs
Penne & Chicken Tenderloins with Spiced Tomato Sauce

Combine first 5 ingredients in a small bowl and rub over chicken
- 1 tsp. ground fennel seed
- 1 tsp. dried basil
- 1/2 tsp. salt
- 1/2 tsp. ground coriander
- 1/4 tsp. freshly ground black pepper
- 1 lb. chicken breast tenderloins, cut into 1-inch pieces
- 1 Tbsp olive oil
- 4 cloves garlic, minced
- 4 cups canned diced tomatoes, undrained
- 1 cup white wine
- 8 oz. uncooked Dreamfields penne pasta
- 1/4 cup (1 oz.) freshly grated Parmesan cheese (or substitute Feta crumbles)
