Asian Turkey Meatballs

Oven to 400 degrees F. Mix all meatball ingredients until well combined
- Meatballs -
- 1/4 C Panko breadcrumbs
- 1-1/4 lbs ground turkey
- 1 egg (or 1/4 C egg beater)
- 1 T ginger
- 1 clove minced garlic
- 1/2 t salt
- 1/4 C chopped, fresh cilantro
- 2-3 chopped green onions
- 1 T low sodium soy sauce
- 2 t seasame oil
- Dipping sauce -
- 4 T low sodium soy sauce
- 2 t sesame oil
- 2 T fresh lime juice
- 2 T water
Chicken Divan, Lightened Up

Broccoli and chicken in a creamy cheesy sauce, topped with more cheese and breadcrumbs
- 1-1/2 lbs broccoli (3 large heads) chopped
- 24 oz boneless skinless chicken breasts (or 18 oz cooked)
- salt and fresh ground pepper
- 1 T butter
- 2 t olive oil
- 2 cloves garlic, crushed
- 2 T shallots, minced (onions would work too)
- 4 T flour
- 1 C chicken broth
- 1 C fat free milk
- 2 oz dry sherry (white wine would work)
- 6 oz shredded reduced-fat swiss
- 1/4 C grated parmesan cheese
- 1/4 C seasoned whole wheat breadcrumbs
- cooking spray
Cheesy Ranch Chex Mix

1. In large microwavable bowl, mix cereal, pretzels, crackers and nuts
- 9 cups Corn Chex®, Rice Chex® or Wheat Chex® cereal (or combination)
- 2 cups bite-size pretzel twists
- 2 cups bite-size cheese crackers
- 3 tablespoons butter or margarine
- 1 package (1 oz) ranch dressing and seasoning mix
- 1 cup peanuts or mixed nuts (optional)
- 1/2 cup grated Parmesan cheese
7-Layer Meatless Tortilla Pie

Mash the pinto beans in a medium bowl with a fork
- 2 cans (15 oz) pinto beans, rinsed and drained
- 1 C salsa
- 1/4 t garlic powder or 1 clove garlic, minced
- 2 T chopped fresh cilantro leaves
- 1 can (15 oz) black beans, rinsed and drained
- 1 small tomato, chopped
- 7 flour tortillas (8-inch)
- 8 oz shredded Cheddar cheese (about 2 cups)
Chicken Cheesesteaks

- 2 boned, skinned chicken breast halves (1 lb.), sliced
- 1 C sliced mushrooms
- 1 C sliced onion
- 1 C sliced green bell pepper

- 1 lb uncooked rigatoni

- 1 T butter
- 2 T canola oil
- 1/2 C flour
- 2 C water
- 2 C cut-up cooked turkey, chicken or ham

- 2 T instant chopped onion
