Gingered Ribs Stir-Fry

This recipe was created by my daughter, Kayla
- 3 lbs. Boneless Country Style Pork Ribs, cut into thin strips
- Marinade
- 1 1/2 tsp concentrated liquid smoke
- 6 Tbsp soy sauce
- 2 tsp fresh ginger root, pureed
- 2 tsp cornstarch
- 1 1/4 cup beef broth
- 3 tsp sugar
- 3 - 4 Tbsp Cookies BBQ Sauce
- 4 Tbsp canola oil
- 4 cloves garlic, minced
- 3 - 4 Tbsp Worcestershire Sauce
- Stir Fry Vegetables
- 3 heads of broccoli
- 8 oz. sugar snap peas
- 16 oz. fresh mushrooms, sliced
- 1 1/2 red bell peppers, sliced
- 10 oz. bean sprouts
- Sesame Seeds
- Salt
- Pepper
Toffee Bars

Preheat the oven to 325 degrees Fahrenheit
- 1 cup brown sugar, firmly packed
- 1 cup margarine, softened
- 2 cups all-purpose flour
- 1 egg yolk
- 1 – 1 1/2 cups Semi-Sweet or Milk Chocolate Chips
- 3/4 - 1 cup Milk Chocolate English Toffee Bits
Hawaiian Chicken Salad

In a large bowl, combine the salad ingredients
- Dressing:
- 5 cups cooked chicken, cubed
- 16 oz. can pineapple chunks, drained
- 8 oz. can sliced water chestnuts, drained
- 1 cup green pepper, cut julienne style
- 1 cup seedless green grapes
- 1 cup seedless red grapes
- 4 oz. shredded cheddar cheese
- 3/4 cup salted cashews
- 1/2 cup celery, chopped
- 1/2 cup green onions, chopped
- 1/3 cup mayonnaise
- 1/3 cup plain yogurt
- 4 tsp. apple juice
- 1/4 - 1/2 tsp. salt
Cheesy Vegetable Soup

Combine the potatoes, onion, and water in a Dutch oven pot; Boil for 7-10 minutes
- 3 potatoes, diced and peeled
- 1 bag California Blend frozen vegetables
- 1/2 cup onion, chopped
- 4 1/2 cups water
- 4 Tbsp flour
- 3 cups milk (I use whole milk but any kind of milk will do)
- 1 lb. Velveeta cheese, cubed
- 2 tsp parsley, chopped
- 1 tsp salt
- 1/4 tsp pepper
Fried Ice Cream

- 2 cups ice cream, any flavor
- 1 1/4 cups Almond Cluster Multi-Grain cereal, crushed (Oatmeal Crisp Almond cereal works well)

Smoky Bacon Corn Pudding

This is an excellent "upgrade" to the usual corn pudding recipes
- 2 1/2 cups corn kernels, fresh OR frozen and thawed
- 5 eggs
- 2 Tbsp unsalted butter, cubed small
- 2 Tbsp sugar
- 1/2 cup milk
- 1/2 cup shredded mozzarella cheese
- 6 slices of bacon, cooked crisp and crumbled
- 1 Tbsp smoked paprika
- 1 1/2 Tbsp salt
- 1 Tbsp cracked black pepper
- 1/4 - 1/2 cup grated Parmesan Cheese
- 3 Tbsp parsley leaves, chopped
