Mexican Rice

Are you craving that great rice from your favorite taco stand? Here it is
- 12 ounces tomatoes, very ripe and cored
- 1 medium white onion
- 3 medium jalapenos
- 2 cups long grain white rice
- 1/3 cup canola oil
- 4 minced garlic cloves
- 2 cups chicken broth
- 1 tablespoon tomato paste (may omit if using canned tomatoes)
- 1 1/2 teaspoons salt
- 1/2 cup fresh cilantro, minced
- 1 lime
French Toast

1. Adjust oven rack to middle position and heat oven to 300 degrees
- 8 large slices hearty white sandwich bread or good-quality challah (see note)
- 1 1/2 cups whole milk , warmed (see note)
- 3 large egg yolks
- 3 tablespoons light brown sugar
- 1/2 teaspoon ground cinnamon
- 2 tablespoons unsalted butter , melted, plus 2 tablespoons for cooking
- 1/4 teaspoon table salt
- 1 tablespoon vanilla extract

Roasted Butternut Squash Gnocchi with Brown Butter Sauce

Preheat oven to 400 F. Chop butternut squash into bite-sized pieces
- 1/2 whole Butternut Squash
- 1-1/2 cup Flour (approximate)
- 2 Tablespoons Olive Oil
- 1/8 teaspoons Nutmeg
- 1/8 teaspoons Cinnamon
- 1/8 teaspoons Salt
- 1/8 teaspoons Pepper
- 1/4 cups Butter
- 1/4 cups Parmesan Cheese
Cake Balls

You can use any flavor cake mix and icing you choose
- 18 ounces lemon cake mix, any brand
- 3 eggs (or as called for by your cake mix)
- 1/3 cup oil (or as called for by your cake mix)
- 1 1/3 cups water (or as called for by your cake mix)
- 1 (15 ounce) container ready made lemon frosting, any brand
- 1 (20 ounce) package almond bark (vanilla confectioner's coating)
Caprese Bites

These are impressive, but almost embarrassingly easy, Think of them as a little appetizer sized Caprese Salad
- 1 pint cherry tomatoes
- 1 bunch fresh basil
- 1 (8 ounce) package mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- salt and pepper
Fruit Pizza

Preheat oven to 350 degrees (or whatever temperature the dough calls for)
- 16 ounces, weight Pillsbury Sugar Cookie Log
- 4 ounces, weight Cream Cheese, softened
- 2 Tablespoons Coconut Rum
- 8 ounces, weight Cool Whip
- 1 cup Sliced Strawberries
- 2 whole Kiwis, Sliced
- 3/4 cups Blueberries
- 1 whole Banana, Sliced
- 1/3 cups Sugar
- 1/3 cups Orange Juice
- 2 Tablespoons Lemon Juice
- 1/4 teaspoons Salt
- 1-1/2 teaspoon Cornstarch
Triple-Chocolate Mousse Cake

- Bottom Layer
- 6 tablespoons (3/4 stick) unsalted butter , cut into 6 pieces, plus extra for greasing pan
- 7 ounces bittersweet chocolate , chopped fine (see note)
- 3/4 teaspoon instant espresso powder
- 1 1/2 teaspoons vanilla extract
- 4 large eggs , separated
- pinch table salt
- 1/3 cup packed (about 2 1/2 ounces) light brown sugar , crumbled with fingers to remove lumps
- Middle Layer
- 2 tablespoons cocoa powder , preferably Dutch-processed
- 5 tablespoons hot water
- 7 ounces bittersweet chocolate , chopped fine (see note)
- 1 1/2 cups cold heavy cream
- 1 tablespoon granulated sugar
- 1/8 teaspoon table salt
- Top Layer
- 3/4 teaspoon powdered gelatin
- 1 tablespoon water

Simple Beef Chili with Kidney Beans

- 2 tablespoons vegetable oil or corn oil
- 2 medium onions , chopped fine (about 2 cups)
- 1 red bell pepper , cut into 1/2-inch cubes
- 6 medium cloves garlic , minced or pressed through garlic press (about 2 tablespoons)
- 1/4 cup chili powder
- 1 tablespoon ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper
- 2 pounds 85 percent lean ground beef
- 2 (15-ounce) cans red kidney beans , drained and rinsed

Pretty Dog Gone Easy Jambalaya Jambalaya

1 Preheat oven to 400 degrees
- 1/2 cup green bell pepper, chopped (or 1 large pepper)
- 1/2 cup celery, chopped
- 1/4 cup onion, chopped
- 2 garlic cloves, minced
- 1 (14 1/2 ounce) can Italian-style diced tomatoes, undrained
- 1 lb smoked sausage, sliced (kielbasa style)
- 1 cup uncooked long grain white rice
- 1/2 teaspoon dried oregano leaves
- 1/2 teaspoon paprika
- 1/2 teaspoon thyme
- 1/4 teaspoon salt
- 1/4 teaspoon ground red pepper
- 1 (14 1/2 ounce) can chicken broth
- 8 ounces uncooked medium shrimp, peeled and deveined
- 1/2 cup frozen peas
