Smothered Pork Chops

ATK Skip the condensed soup and thick-cut chops for deep flavor and tender meat
- 3 ounces bacon (about 3 slices), cut into 1/4-inch pieces
- 2 tablespoons unbleached all-purpose flour
- 1 3/4 cups low-sodium chicken broth
- Vegetable oil
- 4 bone-in, rib-end pork chops , 1/2 to 3/4 inch thick
- Ground black pepper
- 2 medium yellow onions , halved pole-to-pole and sliced thin (about 3 1/2 cups)
- Table salt
- 2 tablespoons water
- 2 medium cloves garlic , pressed through garlic press or minced (about 2 teaspoons)
- 1 teaspoon minced fresh thyme leaves
- 2 bay leaves
- 1 tablespoon minced fresh parsley leaves

To make fresh bread crumbs, grind 2 to 3 slices hearty white sandwich bread in the food processor
- 1 1/2 cups fresh bread crumbs
- 3 tablespoons olive oil
- 1 1/4 cups grated Parmesan cheese
- 1/4 cup chopped fresh basil
- 2 cloves garlic , minced
- 1 (28-ounce) can crushed tomatoes
- 1/2 cup all-purpose flour

- 1 1/2 cups sliced grape tomatoes

- 1 (15 ounce) can red kidney beans, rinsed and drained well
- 1 (2 1/4 ounce) can sliced black olives, drained
- 1 cup coarsley crushed Doritos, measure AFTER crushing
- 1 cup shredded cheddar cheese
- 1 tablespoon chopped cilantro
- 1 -2 california avocado, peeled pitted and diced
