My moms famous cream corn!
- 2 lb. frozen corn
- 1 stick butter
- 1 T. sugar
- 1 T. flour
- Salt and Pepper to taste
- 2 to 3 T. sour cream
Double Layer Pumpkin Cheesecake

Preheat Oven: 350 degrees Beat: Cream cheese, sugar, and vanilla until well blended
- 2 (8 oz) Fat Free Cream Cheese, softened
- 1/2 cup sugar
- 1/2 t. vanilla
- 2 eggs
- 1/2 cup pumpkin puree
- 1/4 t. cinnamon
- Dash of ground nutmeg
- 1/3 cup graham cracker crumbs
- 1/2 cup fat free cool whipped topping
Fat-free Lemon Cheesecake

Directions Make crust: Preheat oven to 325 degrees F
- Crust:
- Ingredients
- Cooking spray
- 1 3/4 cups fat-free vanilla wafer cookie crumbs, or any fat-free cookie crumbs of your choice
- 1/4 cup unsalted butter, melted
- Filling:
- 3 (8-ounce) packages fat-free cream cheese
- 1 cup fat-free sour cream
- 2 cups sugar or sugar substitute (recommended: Splenda)
- 3 large eggs or 3/4 cup egg substitute
- 2 teaspoons lemon zest
- 2 tablespoons lemon juice
- Lemon Curd:
- 1 1/2 teaspoons lemon zest
- 6 tablespoons lemon juice
- 1 large egg, plus 1 large egg yolk
- 1/2 cup sugar or sugar substitute (recommended: Splenda)
- 2 tablespoons unsalted butter, cut into bits, or any fat-free butter substitute
pumpkin cake

Mix ingredients together
- Pumpkin Cake
- 1 C veg oil
- 2 C sugar
- 2C flour
- 4 eggs
- 1 large can of pumpkin 15 or 16 oz.
- 2 tsp baking powder
- 2 tsp baking soda
- 2 tsp cinnamon or more if you like
- Mix ingredients together. Pour into a greased sheet cake pan ( larger than a 9x13 – 1 inch thickness) Bake at 350 degrees for 20-25 min.
- Icing
- 2 brick cream cheese
- 1 tsp vanilla
- ¾ stick butter softened
- 1T milk
- at least 1 C powdered sugar. Add powdered sugar until the consistency does not pour off spoon. Between a pour and a plop. Ha ha!!! Spread onto cooled cake. Enjoy!!!!
Avocado Chicken Salad

Salad: Mix all ingredients and chill
- Avocado Dressing:
- 3 cups cooked, diced chicken
- 3 cups cooked white rice
- 2 avocados, peeled, diced, and tossed with 1 tablespoon lemon juice
- 3/4 cup chopped onion
- 1 cup mayonnaise
- 1 to 2 teaspoons pepper
- 1 teaspoon salt
- 1/4 cup chopped fresh parsley leaves
- 1 large avocado, peeled and mashed with 2 tablespoons lemon juice
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/2 teaspoon Worcestershire sauce
- 1/3 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon salt
- Dash cayenne pepper
- Thick, crusty bread, multi-grain or sourdough, for serving
- Lemon wedges, for garnish
No Bake Quick Chocolate Cookies

- 2 cups sugar
- 1 stick butter
- 5 T. cocoa
- 1/2 cup evaporated milk
- 1/2 cup creamy peanut butter
- 3 cups quick cooking oats
Okra Gumbo

Combine all ingredients and cook over medium heat until tender and warm
- 1 pkg. frozen okra
- 1 chopped onion
- 2 cans petite diced tomatoes
- 1/2 cup ketchup
- 1 T. worcestershire sauce
- Garlic salt to taste
- 1 t. minced garlic
- Salt and Pepper to taste
Toni's Taco Soup

1. Cook hamburger meat with chopped onion
- 1 lb. hamburger meat
- 1 can jalepeno ranch style beans
- 1 can sweet corn
- 1 pkg. ranch seasoning
- 1 chopped onion
- 1 can diced tomatoes
- 1 can tomato sauce
- 1 can chopped green chilies
- 1 pkg. taco seasoning
- 1 can water
- Garlic Salt to taste
Muffin Tin Crab Cakes

Preheat Oven: 450 degrees and coat 12 muffin tins with cooking spray
- 1 lb. crabmeat
- 2 cups fresh whole wheat breadcrumbs
- 1/2 red bell pepper, minced
- 3 scallions, sliced
- 1/4 cup fat free mayo
- 2 lg. eggs
- 1 lg. egg white
- 10 dashes hot sauce
- 1/2 t. celery salt
- 1/4 t. pepper
