Carrot Coconut Red Curry Soup

Heat olive oil in a large saucepan over medium heat
- 2 tablespoons olive oil
- 1 medium onion, diced (about 3/4 cup)
- 2 cloves of garlic, minced (about 1 heaping tablespoon)
