Onion Rings

Position racks in upper and lower thirds of oven; preheat to 450°F
- 2 medium yellow onions
- 3/4 cup all-purpose flour
- 2 teaspoons baking powder
- 3 large eggs
- 1 1/2 cups fine dry breadcrumbs, preferably whole-wheat (see Note)
- 1 tablespoon seasoning blend, such as Cajun, jerk or Old Bay
- Olive oil or canola oil cooking spray
Watermelon Agua Fresca

Combine half the watermelon, half the water and half the sugar in a blender; puree
- 8 cups cubed seeded watermelon, (about 6 pounds with the rind), divided
- 1 cup water, divided
- 1/3 cup sugar, divided
- 1/4 cup fresh lime juice
- 1 liter (4 cups) club soda, or seltzer water, well chilled
- Lime slices, for garnish
Spicy Turnips

Heat the ghee in a pan, add the turnips and fry lightly then set aside
- 3 About 3 tblspn ghee or concentrated butter
- 1 kg turnips, peeled and quartered
- 2 garlic cloves, peeled
- 2 green chillies
- 2.5 cm piece root ginger, peeled
- 1 tspn cumin seeds
- 2 tspn coriander seeds
- 2 tblspn natural yogurt
- 1 tspn salt
- 150 ml water
- 1 tspn sugar
- 1 tspn garam masala
Riggatoni with Maitake Mushroom

In a medium pot, boil water and prepare pasta as directed
- 1 pound fresh rigatoni (I used egg, but you can use regular or whole wheat and I’m sure no one will come knocking)
- 2 tablespoons olive oil (plus a little more for later)
- 1 or 2 cloves garlic, minced
- 1/2 medium onion, chopped
- dash of red pepper flakes (optional if your kids don’t like heat; but they probably don’t like mushrooms either, so might as well throw it in)
- 1 to 2 cups maitake mushrooms (or whatever fresh mushrooms you foraged at the market today), cleaned and chopped into bite-size pieces.
- zest of 1/2 lemon
- salt & pepper to taste
- 1/3 cup bread crumbs
- 1/3 cup Parmesan
- handful of fresh thyme or parsley
Quick Brussels and Bacon

Directions Cook the bacon in a large skillet over medium-high heat until crisp; drain on paper towels and crumble
- 6 slices bacon
- 1/2 tablespoon olive oil
- 3 shallots, chopped
- 1 (16 ounce) package frozen Brussels sprouts, thawed and halved
Whole Wheat Pasta-KitchenAide

Easier than it sounds, and DELICIOUS
- Whole-Wheat Pasta (makes 1 1/4 lbs of pasta)
- 4 eggs
- 2 1/2 C whole-wheat flour
- 1 C all-purpose flour
- 1/2 t salt
- 2-4 T water
Chicken Salad with Watermelon and Peaches

Mix together the chicken, yogurt, mayonnaise, dill and lemon juice
- 3 cups chopped cooked chicken
- 1 cup plain yogurt
- 1/2 cup mayonnaise
- 1 teaspoon dried dill leaf or 1 tablespoon fresh snipped
- Juice from 1 fresh lemon
- Salt and pepper to taste
- 2 peaches, seeded and chopped
- 2 cups chopped watermelon
Dutch's "Wicked Baked Beans"

Saute bacon pieces in fry pan until crispy and remove from pan with a slotted spoon
- 6-8 strips of bacon cut into 1/2 inch squares
- 1/2 Medium onion, diced
- 1/2 Bell pepper, diced
- 1 - 2 Jalapeno Peppers, diced (seeding is optional)
- 1 - 55 ounce can Bushs Baked Beans
- 1-8 ounce can of pineapple chunks, drained
- 1 Cup Brown Sugar, packed
- 1 Cup ketchup
- 1/2 - 1 Tbs. dry (ground) mustard

- 10 cups home made turkey broth
- 2 cans spiced black beans (rinsed)
- 1/4 of a medium green pepper
- 1/4 of a medium red bell pepper
- 2 cans diced tomatoes and peppers
- 2 (4 ounce) can chopped green chile peppers
- 1 large onion, chopped
- 3 large cloves garlic, minced
- 1 1/2 tablespoon lime juice
- 1 teaspoon cayenne pepper
- 1 1/2 teaspoon ground cumin
- salt and pepper to taste
- 1 avocado - peeled, pitted and pureed
- 1/2 teaspoon dried cilantro
- 1 cup shredded Monterey Jack cheese

- 1 small white onion, thinly sliced
- 1 cup white vinegar
