Italian Mini Meat Loaves with Mac and Three Cheeses

Put a large pot of water on to boil for pasta
- * 1 1/3 pounds ground sirloin
- * 1 large egg, beaten
- * 2/3 cup Italian bread crumbs, a couple of handfuls
- * 1/4 cup grated Parmigiano, plus 1/2 cup
- * 1/2 small green bell pepper, chopped
- * 1 small yellow onion, finely chopped
- * 4 cloves garlic, chopped
- * 3 tablespoons tomato paste
- * Salt and pepper
- * 2 tablespoons extra-virgin olive oil
- * 1 pound corkscrew shaped pasta with lines (cavatappi) or small shell pasta
- * 2 tablespoons butter
- * 2 tablespoon all-purpose flour
- * 2 cups milk
- * 2 cups shredded sharp Cheddar
- * 1/2 cup shredded asiago cheese
- * 1 teaspoon coarse black pepper
- * 1/2 cup Italian bread crumbs
- * 2 tablespoons extra-virgin olive oil
- * 2 tablespoons chopped fresh thyme leaves
- * 2 to 3 tablespoons chopped rosemary leaves
- * 1/4 cup chopped flat-leaf parsley

- 4 cups biscuit mix (recommended: Bisquick)
- 1/4 to 1/2 cup sugar
- 1 (12-ounce) can of beer
- 2 tablespoons butter, melted

Melt the butter in a large skillet over medium-high heat
- * 1 stick (1/4 pound) butter
- * 4 ounces all-purpose flour
- * 2 cups chopped onions
- * 1 cup chopped celery
- * 1/2 cup chopped bell peppers
- * 1 pound peeled crawfish tails
- * 2 bay leaves
- * 1 to 2 cups chicken stock
- * 1 teaspoon salt
- * 1/4 teaspoon cayenne pepper
- * 2 tablespoons chopped parsley leaves
- * 3 tablespoons chopped green onions
- * Cooked white rice, for serving

Preheat the oven to 375 degrees F
- Basic Red Sauce:
- 2 2 pounds ground beef
- 5 5 cups Basic Red Sauce, recipe follows
- 1 1 (15-ounce) container ricotta
- 2 2 large eggs
- 1 1 cup grated Parmesan
- 1 1 pound grated Mozzarella
- 1/2 1/2 teaspoon Essence, recipe follows
- 1/2 1/2 teaspoon salt
- 2 2 teaspoons chopped fresh parsley
- 1 1 teaspoon dried basil
- 1/4 1/4 teaspoon ground black pepper
- 12 12 dried (uncooked) lasagna noodles
- 2 2 (28-ounce) cans whole peeled tomatoes
- 2 2 tablespoons olive oil
- 11/2 11/2 cups chopped yellow onions (1 medium yellow onion)
- 1 2 teaspoon minced garlic (about 2 cloves garlic)
- 1/2 1/2 teaspoon salt
- 1/2 1/2 teaspoon dried basil
- 1/2 1/2 teaspoon dried oregano
- 1/8 1/8 teaspoon ground black pepper
- 2 2 (15-ounce) cans tomato sauce
- 3 3 tablespoons tomato paste
- 2 2 cups water
- 1 1 teaspoon sugar
- to the tomatoes in a large bowl and squeeze to break into small pieces. Set aside.
- Remove from the heat, and use as needed.
- 10 1/2 cups (2 1/2 quarts)
- Essence (Emeril's Creole Seasoning):
- 2 1/2 1/2 tablespoons paprika
- 2 2 tablespoons salt
- 2 2 tablespoons garlic powder
- 1 1 tablespoon black pepper
- 1 1 tablespoon onion powder
- 1 1 tablespoon cayenne pepper
- 1 1 tablespoon dried leaf oregano
- 1 1 tablespoon dried thyme
- Combine all ingredients thoroughly and store in an airtight jar or container.
- 2/3 about 2/3 cup
Creamed Spinach

Bring a large pot of water to a boil over high heat, and season generously with salt
- Kosher salt, as needed, plus 3/4 teaspoon
- 2 pounds fresh spinach, stemmed, and thoroughly washed
- 1 1/2 to 2 cups milk
- 1/8 of a small onion, studded with a clove
- 1/2 small bay leaf
- 1 small sprig fresh thyme
- 2 tablespoons unsalted butter, divided
- 2 tablespoons all-purpose flour
- Pinch of freshly grated nutmeg
- Freshly ground black pepper

- Pie:
- 2 3/4 * 2 3/4 cups all-purpose flour
- 1 1/2 * 1 1/2 teaspoons salt
- 1 * 1 teaspoon baking soda
- 1 1/4 * 1 1/4 teaspoons baking powder
- 1 * 1 cup (2-sticks) unsalted butter, softened
- 1 1/2 * 1 1/2 cups packed light brown sugar
- 1/2 * 1/2 cup granulated sugar
- 3 * 3 large eggs
- 1 * 1 tablespoon vanilla extract
- 3 * 3 cups semisweet chocolate chips
- 2 * 2 cups chopped walnuts, optional
- Whipped cream:
- 2 * 2 pints (4-cups) heavy cream
- 1/4 * 1/4 cup confectioners' sugar
- 1/4 * 1/4 cup miniature semisweet chocolate chips

- 4 cloves garlic - pressed
- 1 tsp olive oil
- 2/3 cup water
- 2 cup pineapple juice
- 3 tbsp teriyaki sauce
- 2 tbsp soy sauce
- 1 1/3 cup dark brown sugar
- 1/2 lemon (juice)
- 1/2 small onion - minced
- 1 tbsp. Jack Daniel's whiskey
- 1 tbsp. crushed pineapple
- 1/4 tsp cayenne pepper
