Mix flour and sugar. Mix milk in over double boiler to get warm
- 1 cup sugar
- 3 tbsp flour
- 2 eggs (separated)
- 2 cups sweet milk
- 1 tbsp butter
- 1 tsp vanilla
- Bananas
- Wafers
Apple Pie Moonshine

Boil ingredients together (except for White Lightin') until sugar dissolves then remove from heat
- 1 gallon apple cider
- 1 gallon apple juice
- 3 cups of sugar
- 4 cinnamon sticks
- 1 quart White Lightin'
Goody Girl Championship Potatoes

Fill a 6-quart pot 2/3 full of water; add the crab boil and mix until blended
- 1 package dry form crab boil (recommended: Zatarain's)
- 3 pounds red potatoes
- 1 pound thick-cut bacon, diced
- 1 cup diced red onion
- 1 tablespoon minced garlic
- 1/4 pound butter, at room temperature
- 1/4 pound finely shredded Cheddar
- 1 green onion, chopped
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon paprika
- Salt and pepper
- 3/4 cup sour cream
Hot Cocoa

Combine all ingredients in a mixing bowl and incorporate evenly
- 2 cups powdered sugar
- 1 cup cocoa (Dutch-process preferred)
- 2 1/2 cups powdered milk

Double Dipped Fried Chicken

Rinse the chicken pieces and pat dry with paper towels
- * 3 1/2 pound frying chicken, cut into 8 serving pieces
- * 2 cups buttermilk
- * 1/4 cup water

- Simple Tomato Sauce:
- 5 * 5 tablespoons unsalted butter, plus 2 tablespoons for the lasagna
- 1/2 * 1/2 cup all-purpose flour
- 4 * 4 cups whole milk at room temperature
- * Pinch freshly grated nutmeg
- 1 1/2 * 1 1/2 cups tomato sauce, recipe follows
- * Salt and white pepper
- *
- 1/4 * 1/4 cup extra-virgin olive oil
- 1 * 1 pound ground chuck beef
- * Salt and pepper
- 1 1/2 * 1 1/2 pounds ricotta cheese
- 3 * 3 large eggs
- 1 * 1 pound lasagna sheets, cooked al dente
- 2 * 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry

Preheat oven to 350 degrees F
- For the Filling:
- * /3 cup olive oil
- * 1 cup minced onions
- * 3 cloves garlic, minced
- * 2 pounds ripe tomatoes, cored and cut into 1-inch pieces or 2 (28-ounce) cans plum tomatoes, drained
- * Pinch of sugar
- * Salt and pepper
- * 8 large pasta tubes
- * 1 pound fresh ricotta cheese
- * 2/3 cup freshly grated Parmesan cheese
- * 1 egg yolk
- * 2 tablespoons minced fresh basil
- * 2 tablespoons minced fresh parsley
- * Freshly grated nutmeg to taste
- * Salt and pepper to taste

In a medium sized bowl, combine milk, rosemary, garlic and salt and pepper
- Hickory-smoked Pork Chops:
- 2 2 cups milk
- * Rosemary sprigs
- 1 1 tablespoon minced garlic
- * Hickory smoking chips
- * Salt and pepper
- 3 3 medium pork chops
- * Garlic and Bleu Cheese Mashed Potatoes, recipe follows
- * Caramelized Pears, recipe follows
- * Onion Straws, recipe follows
- * Smoked Baby Portobello Mushroom, recipe follows
- * Roasted Red Pepper, recipe follows
- Yukon Gold, Garlic and Bleu Cheese Mashed Potatoes:
- 2 gold potatoes, approximately 2 pounds, cubed
- 1 tablespoon chopped garlic
- 1 cup milk
- Caramelized Pears:
- 2 pears, sliced
- 1 cup apple juice concentrate
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 1 clove garlic, chopped
- In a medium sized saute pan, combine all of the ingredients over medium heat and saute until the pears soften and the sauce thickens. Set aside.
- Onion Straws:
- 1/4 cup milk
- 2 oil, 2 tablespoons

Baked Apples

Preheat oven to 325 degrees F
- 1 * 1 teaspoon ground cinnamon
- 1/4 * 1/4 teaspoon ground nutmeg
- 1/2 * 1/2 cup sugar
- 6 * 6 same-size Granny Smith apples
- 2 * 2 tablespoons butter, cut into 6 teaspoon-size pieces
- 1 * 1 cup apple juice
- 6 * 6 sprigs fresh mint
Shrimp Gumbo

Combine the melted butter and flour in a large heavy pot, stirring constantly over medium heat
- 1 - 1/2 cups melted butter
- 1 - 1/2 cups all-purpose flour
- 2 cups chopped onions, cut into 3/8" pieces
- 1 cup chopped green peppers, cut into 3/8" pieces
- 1 cup chopped celery, cut into 3/8" pieces
- 1 lb. Andouille sausage, cut into 1/2" pieces
- 1/2 lb. Tasso smoked meat, cut into 1/2" pieces
- 1 tbsp paprika
- 3 tbsp Emeril's Bayou Blast seasoning
- 2 tsp gumbo file, ground
- 1 tsp ground Ancho pepper
- 10 cups cold chicken stock or broth
- 2 tbsp brown sugar
- 2 bay leaves
- 1/2 lb shrimp, cleaned and peeled with tails removed
- salt and pepper to taste
