- 2 tbsp cream or milk

A Gooey, Decadent Chocolate Cake

Position an oven rack in the center of the oven and pre-heat the oven to 350 degrees F
- Chocolate Chip Butter Cream:
- 2 1/2 2 1/2 cups cake flour
- 1 1/2 1/2 teaspoons baking soda
- 1 1 teaspoon salt
- 1 1/2 1/2 sticks unsalted butter, at room temperature
- 2 2 cups sugar
- 3 1/2 1/2 ounces semisweet or bittersweet dark chocolate, melted and cooled
- 1 1 teaspoon vanilla extract
- 2 2 eggs
- 1 1/2 1/2 cups cold water
- * Chambourd raspberry liqueur, for drizzling
- * Chocolate Chip Butter Cream, recipe follows
- * Dark chocolate shavings, for decoration
- 3 cups powdered sugar
- 7 tablespoons hot water
- 4 ounces dark chocolate, melted and cooled
- 2 teaspoons vanilla extract
- 1/2 stick unsalted butter, at room temperature
- 1/4 cup semisweet dark chocolate, finely chopped
- 6 to 8 8 servings

- House Seasoning:
- * 2 cups canned diced tomatoes
- * 2 cups tomato sauce
- * 1 cup water
- * 1/2 cup diced onion
- * 1/2 cup diced green bell pepper
- * 2 cloves garlic, chopped
- * 1/4 cup chopped fresh parsley leaves
- * 1 1/2 teaspoons Italian seasoning
- * 1 1/2 teaspoons House Seasoning, recipe follows
- * 1 1/2 teaspoons seasoning salt
- * 1 1/2 teaspoons sugar
- * 2 small bay leaves
- * 1 1/2 pounds ground beef
- * 8 ounces uncooked angel hair pasta
- * 1 cup grated cheddar
- * 1 cup grated Monterey Jack
- * 1 cup salt
- * 1/4 cup black pepper
- * 1/4 cup garlic powder
- Mix ingredients together and store in an airtight container for up to 6 months.
- Yield: 1 1/2 cups
Ricotta and Ham Calzone

I recommend buying a prepared tile baking stone for all pizza and bread working at home
- Basic Bread Dough:
- 1 recipe basic bread dough, recipe follows
- 1/2 cup fresh ricotta cheese
- 1/3 1-inch prosciutto cotto or ham, cut into 1-inch chunks
- 1/2 1-inch fresh mozzarella, cut into 1-inch chunks
- 2 eggs
- Sea salt and freshly ground black pepper
- 1/4 cup freshly grated pecorino cheese
- Extra-virgin olive oil, for the crust
- Pizza paddle
- 1/4 cup light red wine or white wine
- 3/4 cup warm water
- 1 package yeast
- 1 tablespoon honey
- 1 teaspoon kosher salt
- 1 tablespoon extra-virgin olive oil
- 3 cups all-purpose flour
- 45 2 15 to the risen dough into 2 equal pieces and knead each portion into a round. Cover again and let rise for 15 minutes. The dough is now ready to be used.
Pot Roast

Sprinkle roast on all sides with house seasoning
- House Seasoning:
- * 1 (3-pound) boneless chuck roast
- * 1 1/2 teaspoons House seasoning, recipe follows
- * 1/4 cup vegetable oil
- * 1 onion, thinly sliced
- * 3 bay leaves
- * 3 or 4 beef bouillon cubes, crushed
- * 2 garlic cloves, crushed
- * 1 (10 3/4-ounce) can condensed cream of mushroom soup
- * 1/2 cup Chardonnay
- * 1 cup salt
- * 1/4 cup black pepper
- * 1/4 cup garlic powder
- Mix ingredients together and store in an airtight container for up to 6 months
Grilled Chicken Wings with Spicy Chipotle Hot Sauce and Blue Cheese-Yogurt Dipping Sauce

Heat grill to high. Toss wings in a few tablespoons of oil and season with salt and pepper
- Chipotle Hot Sauce:
- 46 chicken wings
- Vegetable oil
- Salt and freshly ground pepper
- Chipotle Hot Sauce, recipe follows
- Blue Cheese-Yogurt Dip, recipe follows
- 1 1/2 cups red wine vinegar
- 3 tablespoons Dijon mustard
- 2 to 3 tablespoons chipotle pepper puree (depending on how spicy you like it)
- 3 tablespoons honey
- 3 tablespoons vegetable oil
- Salt and freshly ground pepper
- 1 stick unsalted butter, cut into pieces
- 2 tablespoons ancho chile powder
- to together the vinegar, Dijon mustard, chipotle puree, honey, and oil in a medium bowl. Season with salt and pepper, to taste.
- Blue Cheese-Yogurt Dip:
- 1 pint thick Greek yogurt
- 3/4 cup crumbled domestic blue cheese
- 2 tablespoons finely chopped red onion
- 3 tablespoons finely sliced scallions
- Salt and freshly ground pepper
- to 30 ingredients in a bowl and season with salt and pepper, to taste. Cover and refrigerate for at least 30 minutes before serving.
Fire Water
